Easy One-Pan Herb-Roasted Chicken and Vegetables

As summer winds down, I wanted to make a simple one-pan oven roasted chicken, similar to a few recipes I have shared before. With this version, my goal was to keep things just as straightforward while relying heavily on fresh herbs from my garden and turning the chicken into a complete meal with potatoes, carrots, and celery. A touch of honey, fresh lemon, garlic, and a generous selection of herbs creates a beautifully fragrant dish that is comforting, satisfying, and easy enough for a weeknight dinner. Even the pickiest eater may find themselves asking for seconds.

There is something particularly special about cooking with fresh herbs. As I prepared this marinade, the combination of sage, parsley, thyme, rosemary, garlic, lemon, and ginger brought back memories of helping my mom gather herbs to season chicken and the variety of meat dishes she would prepare for us on a Sunday in Trinidad and Tobago as a little boy. Back then, the scent of those essential oils would remain on my tiny hands for hours. This recipe brought that memory right back to me, and I think that is one of the wonderful things about cooking. A familiar aroma can take you somewhere long before the first bite.

Shopping Made Easy
• Fresh sage, parsley, thyme, and rosemary are usually available in the fresh herb section of most well-stocked grocery stores.
• Rou Cou, also known as annatto, is commonly found at Caribbean and Latin grocery stores and may also be available in larger supermarkets.
• Look for chicken legs with the back attached if you want to prepare the recipe exactly as written.
• Small potatoes are especially convenient for this recipe because they can be roasted with the skin on.
• Fresh Scotch bonnet peppers can be found at many Caribbean markets if you decide to add some heat to the dish.
Cooking Notes from the Kitchen
• I kept the potatoes with their skin on, but you can peel them if you prefer.
• Cutting the potatoes into pieces about 2 inches in size allows them to roast alongside the chicken, carrots, and celery.
• The fresh herbs are an important part of this dish. Their aroma becomes especially pronounced as they roast with the chicken and vegetables.
• If you enjoy a little heat, dried pepper flakes, finely diced Scotch bonnet, or another spicy pepper can be added.
• I like giving the chicken a couple of cuts in the thickest parts before adding the marinade. This helps the seasoning reach further into the meat.
• Washing chicken with lime, lemon, or vinegar is a practice familiar in Caribbean kitchens. If that is how you were taught to prepare chicken, you can certainly continue to do so.

Easy One-Pan Herb-Roasted Chicken and Vegetables
Ingredients
- 3/4 cup olive oil
- 1 tablespoon sage (chopped)
- 2 tablespoons parsley (chopped)
- 8-10 cloves garlic (chopped finely)
- 8 sprigs thyme (leaves only)
- 3/4 tablespoon salt
- 1 tablespoon ginger (grated)
- 2 sprigs rosemary (leaves only)
- 3/4 tablespoon black pepper
- 1 tablespoon Dijon mustard
- 1 tablespoon Rou Cou (annatto)
- 2 scallions chopped and divided
- 1 1/2 tablespoons honey
- 1 lemon juiced
- 4 lbs chicken legs (with back attached)
- 2-3 lbs small potatoes (washed, skin on)
- 2-3 stalks celery (chopped)
- 2 large carrots (cut into 1/2-inch pieces)
Instructions
- In a mixing bowl, combine the salt, black pepper, sage, parsley, thyme, rosemary, garlic, lemon juice, honey, Rou Cou, half of the scallions, and Dijon mustard to create the marinade.


- Remove excess fat and skin from the chicken. If you follow the traditional Caribbean practice of washing chicken with lime, lemon, or vinegar, you can do so. Give each piece a couple of cuts where it is thickest.

- Set your oven to 425°F.
- Add the chicken pieces to a large roasting pan.
- Add the carrot and celery pieces.

- Toss in the potatoes. Cut them into pieces about 2 inches in size. I kept the skin on, but you can peel them if you wish.

- Pour the marinade over everything and mix well to coat the chicken and vegetables with the fragrant herb-infused marinade.

- If you want to add a bit of heat to the dish, add dried pepper flakes, finely diced Scotch bonnet, or another spicy pepper you have on hand.

- Cover loosely with foil or parchment paper and roast at 425°F for one hour.

- Remove from the oven, spoon the juices over everything, and return the pan to the oven for another 30 minutes uncovered.

- Adjust the salt, ensure the vegetables and chicken are fully cooked, and top with the remaining scallions.

- It is an ideal one-pan dinner, but you can always pair it with Heirloom Tomato and Watermelon Salad, Cherry Tomato Salad, or Creamy Cucumber Salad.
