  • Stir in the string beans, mixing well to coat with flavors.

  • Remove the lid, stir in grape tomatoes (if using), taste, adjust salt as needed (the pigtails are already salty), and increase heat to reduce any excess liquid.

  • Warm the oil in a deep pot over medium heat, then add the sliced onion, chopped garlic, Scotch Bonnet, and cumin seeds. Reduce to low heat and cook gently.
  • After 3 minutes, stir in green seasoning and cook for 2 more minutes.

  • Add curry powder and continue cooking on low to bloom spices (approx. 4–5 minutes), adding more oil if needed.

    TIP! Even if you wore gloves when handling the hot peppers, I’d recommend washing your hands immediately with soap and water.

  • 1 of lime or lemon; juiced, to wash pork
  • 1/4 teaspoon black pepper
  • 1 tablespoon Caribbean Green Seasoning
  • 3/4 teaspoon salt
  • 1 1/2 tablespoons roasted ground geera cumin
  • 2 tablespoons vegetable oil
  • 1/2 teaspoon geera seeds cumin seeds
  • 2 scallions chopped
  • 4 cloves garlic smashed
  • 2 tablespoons cilantro chopped
