Every wanted to make Crispy Wings without the hot oil bath? What about fresh cut fries, which are a little kinder to your waist and heart? Gone are the days when you require liters of oil and fat to get the color, flavor and texture of fried foods.

I’ll be honest and say that I never had faith in Air Fryer’s (I have 3 of them still in the box down in my basement – sent by manufacturers) until about 6 months ago, when I decided to see what all the hype was about. Further Honesty – while Air Fryers will come close to deep frying, it still isn’t. However keeping in mind that you can cut back on most of the fat, is well worth the slight compromise IMHO.

FYI Masticating juicers are also known as slow juicers, gear, or auger juicers, and the produce is crushed at a slow speed. When using this juicer, the produce is crushed at around 80-100 RPM, then pushed through a sharp screen. Since the juicing process is much slower and does not introduce as much heat and oxygen as with a centrifugal juicer, it provides you with a more nutritious juice.

Perfect Gifts For The Foodie On Your Holiday Shopping List (2014 edition).

If you’re struggling to find the perfect gift this holiday season for the person on your shopping list who you would consider a “foodie”, I’ve got you covered. Usually I’m lucky if I get a Christmas card on Christmas morning… (Santa always hating on ah brother). My new best friend in the kitchen. The Otterbox Agility System for my iPad Mini gets as much use as my favourite pot or knife. Chai Tea?

I must confess that I’m a Chai tea (latte) addict, so I just had to put this on my list. Typically I pay about $5 a cup for a decent Chai latte at the bucks… that can add up very fast when you have a weakness for the rich, spicy, creamy.. warms your soul cup of tea. So when I found these David Rio Chai blends at “HomeSense” (you can order it online as well) I was in heaven. I think they go for about $7 a container, but they make between 10 and 16 cups (depends how rich you want it) and all you have to do is add your favorite milk and hit the buttons on the microwave. I find that after blasting the mixture in the microwave, if you whisk it a bit you’ll get a lovely creamy finish.

Other options would be a good chef’s knife, pots (a wok would be an excellent gift), even something as simple an apron would rock. Be sure to put some thought into what you get and whatever you end up getting will be appreciated.

It’s been an amazing journey with COCO magazine this past year and as they celebrate their one year anniversary I thought there’s no better time to place the spotlight on the amazing things being done over at COCO.

Over the years I’ve tried my best to feature websites, publications and authors who are helping to spread the culinary culture of the Caribbean to a global audience. And though they have an entire section dedicated to “Eats”, where you can find many delicious offerings courtesy of CaribbeanPot.com and many other talented chefs, it’s important to note that COCO is much more than food.

COCO is a weekly online publication that launched on December 14, 2012, catering to the quintessential Caribbean Woman. Although we’ve only been around for a year, we have made significant strides in keeping with the mandate of our Magazine. It is our goal to unearth persons who have a firsthand knowledge of the Caribbean and who we think can help to contribute to building the knowledge base of our readers. Our team is comprised of persons living in the Caribbean as well as the UK, the USA and other parts of the world. Spreading The Culinary Culture Of The Caribbean – Ramin Ganeshram.

For those of you familiar with the blog know that the only time I stray from posting actual recipes is when I feel it necessary to  acknowledge the work others are doing to promote the rich and diverse culinary heritage which comes out of the Caribbean. Though today’s featured work is not necessarily a cook book as I’ve done in t he past, the author is not only a published author, she’s a best seller on Amazon.com as well. You may best know Ramin Ganeshram from her hugely successful ‘“Sweet Hands – Island Cooking From Trinidad And Tobago”” which I gave away on the post I did on making dhalpuri roti (see the bottom of the page) a few weeks back.

Ramin sent me a copy of her latest work “Stir It Up”  back in late spring of this year and if you look closely at the image above you’ll notice that I got one of the copies before the final editing (says not for sale). Besides getting free stuff in the mail, I also appreciate it when others acknowledge my passion for food and everything Caribbean with small tokens like this. I finally got around to reading it about a month ago and I thought it should be something I should share with you guys. And though “Stir It Up” is a novel with teenage readers in mind, I found it to be inspiring, especially since it dealt with the struggles of immigrant families when their traditions and values are threatened by those of their new homeland.

“Stir It Up” is the inspirational story of Anjali, the teenage daughter of a hard-working  immigrant family from Trinidad and Tobago who lives in Queens NY, who’s dream is to one day have her own television show on the Food Network. Her real struggle begins when she gets accepted as a challenger on a reality show on the Food Network to determine their next teen star, but the main audition is the same day as the entrance exam to one of the most prestigious academic schools in NY. Without giving away too much… the story shows the inner struggle not to disappoint her parents, but at the same time follow her dreams.

Though “Stir It Up” was meant for teenage readers I found it quite captivating, since I could identify with the characters in the book. Ramin portrays the true mentality of the average immigrant from the Caribbean who sees everything other than academics as hobbies and our hardworking nature which we use to make a “life” in the new country we call home. I especially like the way actual  recipes are blended seamlessly into a novel as I’ve never seen it done before. Recipes you can easily duplicate in your kitchen with the step by step instructions.

You can certainly tell that you’re reading the work of someone from the Caribbean, but when you come across words like “hockey puck” and “softball” in describing situations, you can tell that the author is also trying to accommodate all readers with words they can identify with. Tracing the route Anjali would take from school to her dad’s roti shop in Queens, was like listening to my mom and dad speak after they go visit my brother who live sin New York. The street names, the buses and subway… it’s as if I’ve been there before.

A wonderful piece of literature which could easily double as a mini recipe book with it’s inclusion of tasty recipes. Hard work, determination and creativity is certainly the recipe for success and the story of Anjali highlights this.
