
Whenever I think about watermelon, my mind goes straight to Trinidad. While nothing beats the freshly harvested watermelons sold along the Blanchisseuse Road on Trinidad’s east coast, where many of the vendors are also the farmers who grew them, I’ve found my own way of keeping that tradition close. Although I didn’t grow up making or eating Watermelon Chow, it’s something I look forward to making every summer when watermelon is in season at my local grocery stores here in Ontario, Canada.
While Mango Chow and its close rival Pineapple Chow are probably the best-known spicy fruit chows enjoyed throughout the Caribbean, this Watermelon Chow deserves a place right alongside them. The natural sweetness of ripe watermelon pairs beautifully with fresh lime juice, garlic, Scotch Bonnet pepper, fresh herbs, and a touch of chili lime seasoning to create that unmistakable balance of sweet, tart, salty, and spicy flavors we love. It’s incredibly refreshing, making it perfect for hot summer days, backyard cookouts, picnics, or simply as a light snack.
One of the things I enjoy most about this Watermelon Chow is how cooling and refreshing it is. In fact, only Cucumber Chow comes close to delivering that same crisp, refreshing quality. Best of all, it’s ready in minutes, with just enough time in the refrigerator for the flavors to mingle before serving.

- Watermelon is easiest to find during the summer months at grocery stores and farmers’ markets.
- Scotch Bonnet peppers are commonly available at Caribbean and West Indian grocery stores.
- Fresh cilantro, mint, garlic, and limes are available year-round at most supermarkets.
- Trader Joe’s Chili Lime Seasoning is used in this recipe, but similar chili-lime blends can be found at many grocery stores.
- Freshly squeezed lime juice will always provide the brightest flavor.
Cooking Notes from the Kitchen
- I recommend using chilled watermelon for an even more refreshing chow.
- Mix gently so the watermelon chunks stay intact.
- Adjust the Scotch Bonnet pepper to suit your preferred level of heat.
- Fresh lime juice makes a noticeable difference compared to bottled juice.
- Giving the chow a few minutes to rest before serving allows the flavors to fully develop.


Refreshing Watermelon Chow
Ingredients
- 3 lbs watermelon large chunks
- 1/2 teaspoon salt
- 2 cloves garlic crushed
- 1/4 Scotch Bonnet pepper finely chopped
- 2 tablespoons cilantro chopped
- 2 tablespoons mint chiffonade
- 1/2 teaspoon chili lime powder Trader Joe’s
- 2 limes juiced
Instructions
- Add the large chunks of the watermelon to a large bowl. I'd suggest using chilled watermelon.

- Now top with all of the ingredients and, being somewhat gentle, combine to allow all of the flavors to marry and become harmonious.


- I’d recommend allowing this to sit in the fridge for about 10 to 15 minutes to marinate, or cousoumeh (pronounced coo-sue-may), as we’d say in Trinidad. In Trinidadian Creole, cousoumeh refers to letting ingredients sit together so the flavors have time to marry and become harmonious before serving. While the term can also describe ingredients slowly simmering together, in this recipe it’s all about giving the watermelon time to absorb the lime juice, garlic, herbs, and pepper.
