There are few drinks that say Caribbean quite like Mauby, and this Refreshing Caribbean Mauby Lemonade is one of my favourite ways to enjoy it on a hot day. While this isn’t your traditional Caribbean Mauby recipe, it beautifully combines the distinctive earthy, slightly bitter notes of Mauby with the bright, thirst-quenching flavour of freshly squeezed lemonade. The result is a refreshing drink that’s familiar yet completely new.

Just as I’ve done with my Sorrel Lemonade, Guava Lemonade, and Mango Peach Lemonade recipes, this Mauby Lemonade is all about bringing together classic Caribbean flavours in a fun and refreshing way. It’s the perfect beverage for summer gatherings, backyard barbecues, or simply cooling down after a long day in the sun.

The aroma alone takes me back to my childhood. As the Mauby bark gently simmers with star anise, cinnamon, bay leaf, and citrus, the kitchen fills with a fragrance I know all too well. This here is the scent of my childhood (admittedly, not a good one, as I disliked Mauby as a child). Every Sunday morning there would be a pot steeping in the kitchen while Sunday lunch was being prepared. It’s a memory that never fades, and adding fresh lemon juice transforms those nostalgic flavours into an incredibly refreshing summer drink that I thoroughly enjoy.

Water Provides the base for both brewing the Mauby syrup and balancing the finished drink.

Mauby Bark The signature ingredient that gives the drink its unmistakable earthy, slightly bitter Caribbean flavour.

Star Anise Adds a gentle licorice note that complements the natural flavour of the Mauby.

Cinnamon Stick Brings warmth and subtle spice to the syrup.

Bay Leaf Adds another layer of aromatic depth while the syrup steeps.

Dried Orange Peel Optional, but contributes a pleasant citrus aroma and slight bitterness.

Sugar Sweetens the Mauby and helps balance its natural bitterness. Growing up, Mom and Dad always sweetened ours with raw cane sugar, and that’s still my preference today.

Fresh Lemon Juice Brings vibrant acidity and transforms the Mauby syrup into a refreshing Mauby Lemonade.

Shopping Made Easy

  • Mauby bark is available at most Caribbean grocery stores and many online specialty retailers.
  • Fresh lemons will always provide better flavour than bottled lemon juice.
  • Look for whole spices whenever possible for the best aroma and flavour.
  • Dried orange peel is optional and can usually be found in the spice aisle or made at home.
  • Raw cane sugar works beautifully if you want a more traditional Caribbean flavour.

Refreshing Caribbean Mauby Lemonade

This refreshing Caribbean Mauby Lemonade combines homemade Mauby syrup with fresh lemon juice for a unique tropical drink that's sweet, citrusy, and perfectly balanced by the classic earthy flavour of Mauby.

Ingredients
  

  • 10 cups water divided
  • 1 star anise
  • 4 pieces Mauby bark
  • 1- inch piece cinnamon stick
  • 1 bay leaf
  • 4- inch piece dried orange peel optional
  • 4 –6 slices orange
  • 1 1/2 cups sugar
  • 1 cup fresh lemon juice about 5 to 6 lemons

Instructions
 

  • Place 5 cups of the water into a saucepan along with the star anise, Mauby bark, cinnamon stick, bay leaf, dried orange peel, orange slices, and sugar.

  • Bring to a boil, then reduce to a gentle simmer and cook for 10 minutes.

  • Remove from the heat and allow the mixture to cool completely while it continues to steep. This here is the scent of my childhood. Every Sunday morning there would be a pot of Mauby steeping in the kitchen while Sunday lunch was being prepared.
  • Once completely cooled, strain the liquid into a large pitcher or bowl, discarding the solids.

  • Add the remaining 5 cups of water along with the fresh lemon juice.

  • Whisk well until fully combined.
  • Taste and adjust the sweetness if necessary. Keep in mind that it a may dilute a bit when ice is added.

  • Chill thoroughly before serving over ice with fresh lemon slices and mint.

Can I make Mauby Lemonade ahead of time?

Yes. In fact, it tastes even better after chilling for several hours, allowing the flavours to fully meld together. Be sure to stir well before serving.

Can I use bottled lemon juice?

Freshly squeezed lemon juice is highly recommended. It provides a brighter, cleaner flavour that complements the Mauby much better than bottled juice.

Is Mauby Lemonade supposed to taste slightly bitter?

Yes. Mauby naturally has a pleasant earthy bitterness. The sugar and fresh lemon juice balance those flavours, creating a refreshing drink that’s both sweet and slightly bitter. Using honey instead of sugar may assist with the slight bitterness.

Can I adjust the sweetness?

Absolutely. Everyone enjoys Mauby differently, so feel free to add more or less sugar to suit your taste. 

Can I use this Mauby syrup for other drinks?

Yes. The Mauby syrup makes an excellent base for sparkling water, cocktails, iced tea, or other citrus beverages.
