Quick And Tasty Ham Fried Rice Using Leftovers.

Fried rice and leftovers goes hand in hand. I can’t tell you the joy I feel in my soul when I see leftover rice in the fridge. This time around along with the rice, I remembered that there was ham in the freezer from last Thanksgiving. So I give you, my quick, easy and delicious Ham Fried Rice.

You’ll Need…

2-3 cups cooked rice (chilled)
2 scallions (chopped)
1 clove garlic (diced fine or crushed)
1/4 habanero pepper (optional – fine dice)
1 tablespoon light soy sauce
3/4 tablespoon oyster sauce
3/4 cup peas (I used frozen)
1 tablespoon vegetable oil
1 pimento pepper (seasoning pepper – diced fine)
1/2 carrot (1/2 cup diced)
1 cup diced ham

Time to prep the ingredients as this is a very quick recipe and we need everything handy.

Heat the oil on a medium/high heat in a wide pan (I used my wok, but you can use a frying pan or skillet if you like) then add the cubed ham (I had it thawed) and cook for 2-3 minutes. Since the pieces of ham was a bit fatty, I wanted to render down some of that fat to add additional flavor to the completed fried rice.

It’s now time to add the frozen peas followed by the pimento (use bell peppers if you can’t source Pimento peppers) and habanero pepper .. 30 seconds later add the garlic followed by the oyster sauce and stir well. Remember to wear gloves when handling such hot peppers as Habaneros and do wash your hands after with soap and water. Also remember that the seeds and white membrane around the seeds will be packed with raw heat.

May I recommend that you use chilled rice or at least day old rice as you will get a much more grainy texture to your finished dish. Add the rice, followed by the soy sauce and mix well.

Basically all you need to do is make sure the rice heats through (about 3-4 minutes). I did cook my rice with salt, so the sodium from the soy sauce is enough to season this perfectly for me. Adjust with added salt if you need to.

Turn off the stove and top with the scallions.. You’re done! This is why I LOVE fried rice. Quick, simple ingredients and an outstanding one-pot meal.

The Ultimate Chicken Tikka Masala.

Two clarifications to make before we get to the recipe. 1. There’s ABSOLUTELY nothing “Caribbean” about this recipe. However I was challenged to share this Chicken Tikka Masala reccipe via Instagram and I also believe it would be something which would fit naturally within our diverse culinary landscape. And 2. …don’t spend too much time analyzing the bold title – I do stand behind the recipe 100% though (smile).

You’ll Need…

3-4 lbs chicken (boneless chicken thighs)
1 1/2 tablespoon veg oil
1 teaspoon crushed garlic
1 tablespoon grated ginger
3/4 tablespoon salt
1/4 teaspoon black pepper
3/4 cup plain yogurt
1 tablespoon garam masala
1 teaspoon cardamon (about 5 pods)
1 teaspoon coriander seeds (or powder)
1 teaspoon cumin seeds
1 tablespoon turmeric
1 tablespoon chili powder
2 tablespoon clarified butter (ghee)
1 large onion (diced)
2 medium tomatoes (diced finely – almost like a thick paste)
1 1/4 cup coconut milk
1 tablespoon honey
1-2 tablespoon cilantro (chopped finely)

It’s time to season and marinate the chicken pieces. First off I placed the coriander seeds, cumin and cardamon pods in my spice grinder and created a powder. Feel free to use powdered coriander, cumin and cardamon if you don’t have a spice grinder. A stone mortar and pestle will work as well.

Place the chicken in a large bowl and add the salt, black pepper, yogurt, coriander, cumin, cardamon, turmeric, chilli powder, garam masala, ginger and garlic. Then mix in the veg oil and marinate for 2 hours in the fridge.

It’s time to get started cooking. I’d recommend taking the marinated chicken out of the fridge about 15 minutes before we start here, as to get it up to room temperature. Add the clarified butter to a deep/wide pan over medium heat. Then add the pieces of seasoned chicken and cook/brown for about 10-13 minutes (flip). You may need to do this in two batches.

Set the chicken aside to cool a bit. There should still be fat in the pot (if not add more clarified butter). Adjust the heat to low, then add the diced onion (if you want to add more garlic and ginger here, you may). Add the tomato paste and diced tomato after 2 minutes.

Cook on the low heat for 2-3 minutes, then add the coconut milk. In most recipes you’ll see people use cream, but being from the Caribbean… you knew I’d rock the coconut milk. I almost forgot (IMPORTANT) add the coconut milk to the bowl you marinated the chicken in and swish it around to pick up any remaining spices etc. Then add to the pot. Raise the heat to bring to a gentle boil.

The chicken should be cool enough to handle now, cut into serving size pieces and get ready to add to the pot once it comes to a boil.

Stir well after adding the chicken to the pot, then reduce the heat to a simmer and cook for about 5-8 minutes. Basically until all the flavors and textures combines nicely and you get a consistency to the gravy you’re happy with. Due to the slight acidity from the tomatoes, I like adding a bit of honey (or brown sugar) at this point.

Taste for salt and adjust to your own liking, then top with the chopped cilantro. Do remember that the gravy will thicken more with the residual heat from the pot.

  2. Add chicken pieces, toss to coat, and marinate for at least 2 hours or overnight.

  3. Heat oil or ghee in a skillet over medium. Add diced onion and sauté 3–4 minutes until soft.
  4. Add marinated chicken (reserve extra marinade), browning on all sides, about 5 minutes. Remove and set aside.

  5. Add tomatoes and reserved marinade to the pan. Cook 5 minutes, stirring, until tomatoes begin to break down.
  6. Return chicken to pan, stir in coconut milk and honey. 

  7. Bring to a gentle simmer, cover, and cook 15–20 minutes until chicken is cooked through and sauce thickens.

  8. Taste and adjust seasoning. Stir in cilantro before serving.

Incredible Caribbean Fried Chicken (gluten free too).

Fried Chicken! There are as many ways to make this iconic dish as there are people who claim that their recipe is the greatest on the planet. While I won’t make such a bold statement, I will say this fried Chicken will rival and ‘better’ many of the recipes you’ve tried before. After-all my mommy taught me how to rock this one.

You’ll Need…

10-14 Chicken drumsticks
1 tablespoon Caribbean Green Seasoning
3/4 teaspoon salt
1/8 teaspoon black pepper
1/2 medium onion (grated)
1/2 teaspoon hot sauce (I used homemade Peppersauce)
1 teaspoon Curry Powder (madras blend)
1 1/2 tablespoon corn starch

To season the oil…

  • 5-8 sprigs of thyme
  • 2 scotch bonnet peppers
  • 1 head of garlic (cut in half – skin on)
  • 3-4 cups vegetable oil

TIP! Pre-heat the oil to 350ºF – While the chicken is frying, adjust the heat to maintain 325ºF in the oil.

It’s time to season and marinate your cleaned chicken drumsticks. In a large bowl or large zipper bag, add the chicken, Caribbean Green Seasoning, salt, black pepper, pepper-sauce, curry powder, corn starch (it will give the chicken a crispy finish) and grate in the onion. Mix well and set in the fridge to marinate for 2 hours (at least).

It’s time set up your frying station and heat the oil – heavy skillet and around med-high heat. Basically I have the seasoned and marinated chicken (room temperature now), the cast iron pan and a sheet pan with a wire rack and tongs.

You have 2 options here. As the oil heats, add the garlic, thyme and scotch bonnet peppers. Or as in my case, I added the first batch of chicken to the pan, then added the garlic, scotch bonnets and thyme. Do NOT over-crowd the pan with chicken pieces or the temperature of the oil will drop and you’ll get soggy/oily chicken. Do NOT over-fill the pan with oil – leave room for when you add the chicken pieces to fry. And DO NOT break the scotch bonnet peppers, or you will release the beast.

It will take between 15-20 minutes to cook the chicken (depending on the size of the drumsticks) all the way through and do remember that as the chicken cools it will go a bit darker in color. Set on to the wire rack to drain off any excess oil and if you want you can sprinkle on some additional salt while they’re still hot. Keep in mind that I’ve cut back on the amount of salt I use in my daily diet.

Such a simple yet delicious way to prepare fried chicken as we do in Caribbean. Try to not skip seasoning the oil as I did, this adds a wonderful flavor to the completed fried chicken.

Crispy Chinese Style Pork Belly.

This dish brings back a ton of memories every-time I make it. I first shared this recipe back in 2018 on the YouTube channel and to this day it’s still a hit. As a young fella on the islands, Saturdays were reserved for attending Kung Fu movies at the local cinemas in San Fernando with my dad and younger brother. After-which dad would take us to a Chinese shop/restaurant on Mucurapo Street to have this same crispy pork belly – sandwiches. Loaded with pepeprsauce, ketchup and the odd time.. topped with chow mein. Real niceness!

You’ll Need…

3-4 lbs pork belly
2 tablespoon Chinese cooking wine
2 teaspoon sugar
1 teaspoon salt + 1 teaspoon for topping
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1 teaspoon 5 spice powder
2 tablespoon white vinegar

Important! Please try to get a piece of pork belly with a fair amount of lean meat and not too much fat. while you do need the fat, I find that too many times restaurants give us overly fatty crispy pork belly.

Make sure the pork is hair free (you may need to use a razor to remove any remaining hair on the skin). You now need to prick the skin of the pork so we get that crunch/crispy skin after it’s done in the oven. I used bamboo skewers to prick the skin (watch the video) but you can use anything with a sharp point – that can go through the skin (it can be tough). Try to prick as much of the skin as you can.

Then flip it over and make 1 inch (wide) cuts down the length of the flesh and about 1/2 inch deep (as in the pic below). here is where we’ll add the rub, so to add a ton of flavor to the completed dish.

First off, brush the Chinese cooking wine over the flesh side of the pork belly (not the skin) and into the cuts we made. Then make a mixture with the salt, black pepper, Chinese 5 Spice powder, sugar, garlic powder and onion powder and work into the flesh and cuts (NOT the skin).

Now flip it over and place in a bowl and into the fridge to air-dry overnight. Do NOT cover!

The next day, remove it from the fridge and let it come up to room temperature. Please pre-heat your oven to 400 F. Create a pouch with foil for the flesh side of the belly (see image below), with the skin exposed and brush the skin with the vinegar, then sprinkle on the remaining salt. Into the oven on the middle rack.

After 55 minutes, it’s time to crank up the heat in your oven to “broil” – which in my oven is 500 F.

Back on the middle rack – PLEASE keep an eye on things as this is where it can burn with the high heat. In my case the edges did char a bit, but small ting. It took about 7-10 minutes.

Allow it to cool, then flip it over and using the long cuts we originally made as a guide, slice though. then cut into bite size pieces.

Caribbean Green Seasoning Roasted Chicken.

If you’re looking for a quick and delicious way to oven roast a chicken, I’v got such a recipe to share with you today. Mom would do something similar for us when we were kids on the islands, but heavier on the seasoning and she would cut the chicken into parts. Additionally, she never finished with the glaze as I’m about to show you.

You’ll Need…

4 lb chicken
1 teaspoon sea salt
1/2 teaspoon black pepper
1 heaping tablespoon Caribbean Green Seasoning
2 tablespoon olive oil
1 lemon (juice)
1 teaspoon Dijon mustard
2 tablespoon honey

  • Optional – grated ginger, pepper sauce (should you want it spicy) and sesame oil

IMPORTANT: If doing this recipe gluten free, please go through the entire list of ingredients to make sure they meet with your specific Gluten Free Dietary needs.

The first thing we’ve got to do is to spatchcock (remove the back bone) the chicken. Please watch the video below for the step by step process. Basically you can use kitchen shears or a sharp butcher’s knife to do so. Once the backbone is remove, use your hands to press-down on the breast of the chicken to flatten it. This will drastically reduce on the cooking time in the oven.

Preheat your oven to 375 F as we season the chicken.

In a small bowl, dilute the green seasoning with the olive oil. Then apply the salt and black pepper, along with the diluted green seasoning to both sides of the chicken.

I like using a wire rack in my baking tray as I like the hot air being able to surround the chicken. Cooks faster and more even. Plus it avoids me having to flip the chicken during roasting process. Be sure to line your baking tray with foil or parchment paper to avoid a mess to clean after.

Place the seasoned chicken into the oven, on the middle rack. Around the 50 minute mark we can remove the chicken and start with the simple glaze.

Mix the honey, mustard and lemon juice, then brush it onto the skin side of the chicken and back into the oven for 5-7 minutes. You should have enough glaze for a second round of brushing. As you take out the chicken after the first glaze, crank-up your heat to 425 F.

Since we increased the heat be mindful that the sugar in the honey can burn easily, so keep an eye on things. I left the chicken in for a further 5 minutes after the last glaze and the higher heat. Please note that at no time did I cover the chicken while it roasted.

Outstanding Oven Jerk Pork.

There’s a special place in my belly for jerk pork (no lie). While I much prefer it made over a coals fire so you get lovely smoked sort of finish, which really compliments the herbs and other ingredients in the classic Jamaican jerk marinade. The said… reality in Canada is it can get VERY cold during the winter months, so realistically I had to come up with a recipe with will duplicate those same flavors, but in an everyday kitchen oven. Here is such a recipe.

You’ll Need…

5-8 lbs Pork ( a cheap cut – fatty)

For the marinade…

3 tables spoon olive oil
1 lemon (juice)
1 teaspoon salt
1/4 teaspoon black pepper
1 large onion
4 scallions
10 sprigs thyme
3/4 teaspoon cinnamon
15 pimento berries (all spice)
1/2 teaspoon nutmeg
2 tablespoon dark soy sauce
2-3 scotch bonnet peppers
2 tablespoon honey (or brown sugar)
2 tablespoon Honey Vinegar (optional)
thumb size piece ginger
5 cloves garlic
2-3 shallots

For dressing the roasting pan (optional)
+ thyme 5-8 sprigs
+ scallions 3
+ Orange juice 1 cup

Important! If doing this recipe gluten free, please go through the entire list of ingredients to make sure they meet with your specific gluten free dietary needs. Especially the soy sauce, which will have to be substituted for a gluten free type like Tamari.

Basically all you’re doing to start, is to create the marinade. Give all the ingredients a rough chop (where needed), then into a food processor or blender. You have 2 options A smooth marinade or a somewhat chunky one. I prefer chunky, so I pulsed the ingredients until it was at the texture and consistency I like.

The next step is to (well what I did). The piece of pork I used was from the leg or shoulder area (round piece of meat), so I butterfly it and made some deep cuts at the same time, to allow the marinade to really penetrate the meat and infuse this wonderful jerk favor from deep (watch the video below). Please try your best to use a fatty or marbled piece of pork. Not only will it be a cheaper cut, that fat will render and keep the meat really moist. Place the pork in a strong (big) zipper bag and pour the marinade over it.. massage and place in the fridge overnight for maximum flavor. Place the bag on a plate in case the bag leaks and if you remember, try to flip it a couple times during the marination process.

The next day.. pre-heat your oven to 375F and allow your pork to come up to room temperature (outside the fridge). Then place it in a heavy roasting pan and add the other ingredients mention in the list above. I pour the orange juice in the same bag we marinated the pork and moved it around to pick up any remaining marinade. Then onto the piece of pork in the roasting pan (I used a shallow side dutch oven).

Now into the 375 F oven on the middle rack. No I didn’t cover the roasting pan. After 30 minutes of so, I took it out of the oven and used the juices on the side to baste it a bit, then back into the oven. I believe I did this about 5-7 times during the roasting process.

It took about 3 hours in total to fully cook to my liking. At that point I took it out of the oven, tented it with some foil and allowed it to rest for about 15 minutes before slicing it up. Keep in mind that if you use a piece of pork with a bone running though the middle like I did.. be mindful when slicing. Also note that the scotch bonnet peppers will make this very spicy (don’t use the seeds if you want to tame it down a bit) and to wash your hands with soap and water immediately after handling such HOT peppers.

Save the pan drippings to pour over the sliced jerk pork, especially if you’ll be making sandwiches with the meat. That low and slow heat will certainly develop similar flavors to having made this over a coals fire.. so no big deal when it’s – 30 C outside during the winter months in Canada. The Ultimate Slowcooker Oxtail Recipe.

With the overwhelming success (and demand for more crockpot recipes) of the Slow-cooker Curry Goat recipe, I thought I’d share another Caribbean classic done in the very same crock-pot (slow-cooker). Fall off the bone tender oxtail, in a rich stew gravy like moms and grandma make, but in a slowcooker. Seasoned as we’d normally do in the Caribbean, these oxtails are slowly braised for tenderness and to infuse every piece with tons of mouth-watering flavor. Set it and forget it.. the perfect recipe for busy (and lazy) individuals.

You’ll Need…

4-5 lbs oxtails (cut, trimmed and washed with water and lime or lime juice)
3/4 tablespoon salt
1/4 teaspoon black pepper
1 tablespoon Caribbean Green Seasoning
1 teaspoon Worcestershire sauce
1 scotch bonnet (optional)
2 tablespoon tomato paste (concentrated tomato)
4 sprigs thyme
1 large tomato (diced)
2 scallions (chopped)
3-5 cloves garlic (smashed)
1 medium onion (diced)
1/2 teaspoon Caribbean Browning
1 teaspoon dark soy sauce
1 star anise
1 large carrot (cut into thick wheels)
1 teaspoon grated ginger
1 Bay-leaf
1 beef cube (stock)
1 cup water
1 1/2 teaspoon brown sugar
1 1/2 tablespoon parsley (chopped fine)

Important! If doing this recipe gluten free, please go through the entire list of ingredients to make sure they meet with your specific gluten free dietary needs. Especially the soy sauce, browning and Worcestershire sauce. Remember to wash your hands with soap and water immediately after handling Scotch Bonnet peppers.

Place the prepared oxtails (get your butcher to cut it for you – 1 inch pieces) into a large bowl or in the crock pot you’ll be using. For better results you can season and marinate this overnight. I didn’t.

Add the salt, dark soy, grated ginger, tomato paste (puree), Caribbean Green Seasoning, black pepper, Worcestershire sauce, thyme, scallions, garlic, onion, carrot, tomato, star anise, scotch bonnet, Caribbean Browning, 1 beef stock cube and water. Mix and marinate if you want.

Set the slowcooker to high and add the bay leaf and brown sugar. Cover and let it cook on high for 5 1/2 hours or until fork tender. Times may vary depending on how thick you cut your oxtails, how old the cow was when butchered and the temperature of your slowcooker.

After 5 1/2 hrs, taste for salt and adjust accordingly. Remove the pieces of oxtails and big pieces of carrots and set aside. Pour the gravy into a sauce pan and bring to a boil. Reduce by about 30%, then use a whisk or potato masher and break everything up in the pan to thicken. Being careful, strain so all the thick stuff is removed and you have a smooth sauce. Bring back to a simmer and add the parsley. Adjust the salt if you wish. (watch the video below to follow along).

Pour 1/2 (or all) onto the oxtails we set aside and the rest can be saved to a gravy boat to pour onto any starch you serve these tasty oxtails with.

  1. In a slow cooker add Oxtail (4 pound).
  2. Season with Salt (3/4 tablespoon), Dark Soy Sauce (1 teaspoon), Fresh Ginger (1 teaspoon), Tomato Paste (2 tablespoon), Green Caribbean Seasoning (1 tablespoon), Worcestershire Sauce (1 teaspoon), Ground Black Pepper (1/4 teaspoon), Fresh Thyme (4 sprig), Scallion (1 bunch), Garlic (3 clove) and Onion (1).
  3. Add in the Tomato (1), Carrot (1), Star Anise (1), Bay Leaf (1), Scotch Bonnet Pepper (1), West Indian Browning (1/2 teaspoon), Beef Stock Cube (1) and Water (1/2 cup).
  4. Mix everything well and add Brown Sugar (1 1/2 teaspoon).
  5. Set your slow cooker on high and let it cook for 5 1/2 hours.
  6. Remove the bay leaf, sprigs of thyme and star anise.
  7. Remove the meat from the gravy and set aside.
  8. Skim the fat off the gravy and add it to a pan set over medium heat.
  9. Whisk it continuously to reduce the sauce.
  10. Strain the gravy and reduce further. Add in the Fresh Parsley (1 tablespoon).
  11. Pour the sauce over the oxtail. Serve and enjoy!

Delicious Chinese Influenced Green Beans With Chicken.

Like Spinach (all greens), beans of all types are my some of my favorite food to eat/cook. This recipe is based on a bean dish found at many Chinese restaurants in Trinidad and Tobago (and Markham). While not the exact thing, it can hold it’s own on any dinner table. Feel free to use ground beef, turkey or pork if you want to play around with the protein a bit. And I’m sure my vegan friends can make use of some firm tofu if you’d like to give this one a test-drive. BTW, salted cod bits would rock in this recipe too (instead of the chicken).

You’ll Need…

1 lb string beans (trimmed)
1/2 lb ground chicken
2 tablespoon veg oil (add more if needed)
1 tablespoon diced ginger
2 large cloves garlic (diced fine)
1/4 teaspoon salt
1 tablespoon Hoisin Sauce
2-4 drops sesame oil
1 1/4 tablespoon dark soy sauce
2-3 birds eye pepper
1 tablespoon Chinese cooking wine

IMPORTANT! Please go though the entire list of ingredients if making this dish gluten free, to make sure they meet with your specific gluten free dietary needs. Especially the Soy and Hoisin Sauces.

In your wok or pan, add the vegetable oil and ground chicken and brown off on a medium heat.  As it cook, bring a pot of water to a boil, then go in with the trimmed beans. Blanche quickly (about 2-3 minutes), then rinse in cold water or in a bowl with water and ice. The idea is to stop the cooking and help maintain the brilliant green color.

I added the vegetable oil as the ground chicken can be very dry. Note that during the winter months in Canada, the water in the tap is very cold so I didn’t have to use ice.

Be sure to break up the chicken as it browns off. it took about 5-7 minutes. Now add the garlic, ginger and diced bird’s eye pepper (I included the seeds for a gentle kick). Cook on low heat so you don’t burn the garlic.  After about 3 minutes, add the Hoisin, black pepper, and soy sauce. Stir well and cook for 2-3 minutes. Then add the sesame oil and cooking wine and stir.

Turn the heat (med/high) up to get a bit of crisp edges on the ground chicken, then go in with the beans and stir well. Top with the salt. Do keep in mind that the soy sauce we used will help to season this dish, so be mindful if adding extra salt.

After adding the beans I cooked it for another 4 minutes or so, but you can cook for longer or less, depending on how you like your beans cooked  – be mindful that we did precook the beans a bit at the start. Adjust the salt at this point. I topped with a whole bird’s eye pepper for show.

Fork Tender Herb and Wine Braised Oxtails.

Is there anything more comforting that fork tender oxtails served with a heaping pile of garlic mashed cassava (yams or potato will work also) on a chilly night, when you’re tired from a long day? Yes, there is. Oxtails fork tender stewed in a rich herb and wine sauce! The flavors of this dish will surely impress you, your family and the lucky friends you invite over for dinner. While oxtail is a classic cut of meat to cook in the Caribbean, we rarely ever use wine in our cooking so this may seem a bit strange for my Caribbean people. Nevertheless… a stunning dish.

You’ll Need…

3 lbs oxtails (cut and trimmed)
2 scallions (chopped)
2 tablespoon veg oil
2 tablespoon flour
1 teaspoon black pepper (divided)
3/4 tablespoon salt (divided)
1 tablespoon tomato puree (concentrate)
2-3 cups beef stock
1 stalk celery (minced)
2 cloves garlic (minced)
1 large carrot (sliced)
1 pimento pepper (minced)
1 cayenne pepper
1 cup red wine
4 sprigs thyme
3/4 teaspoon allspice
10-12 pearl onions
1 bay leaf
1 tablespoon Worcestershire sauce

* lime or lemon for washing the oxtail pieces

Have your butcher cut the oxtails into 1.5 inch pieces as you kitchen knife will struggle to do so. Wash with cool water and the juice of a lime or lemon, drain and pat dry with paper towels. Heat the oil in a heavy (oven-proof) pan on a medium heat. Dust the oxtail pieces with the flour, then add a 1/3 of it and brown on all sides. Remove and repeat until all the pieces of oxtails get a little color. The flour will help to develop a nice thick gravy later, along with helping us achieve some color.

Remove all the oxtail pieces from the pan and set aside. Turn the heat down to low (add a bit more oil in the pan if it’s dry) and go in with the celery, scallions, pimento pepper and garlic. Cook for about 2-3 minutes, then add the tomato puree and stir well. If you can’t find pimento (aka seasoning) pepper, add a bit of diced bell pepper.

Now add the red wine to deglaze the pan and cook out until it’s back to a relatively dry pan.  After which you can crank up the heat and add the rest of the ingredients, followed by the beef stock. Bring to a boil.

Cover with foil and place on the middle rack in preheated 375 F oven. Be sure to keep an eye on things, in the event you need to add a bit more beef stock. After 3 hrs and 15 minutes the oxtails should be fork tender and you’ll have a thick and rich gravy. Taste for salt and adjust. Keep in mind that the beef stock you use may have a sodium element to it. Try not to break the cayenne pepper or risk the entire dish becoming peppery.. unless that’s what you want.  Do remember to skim off any fat (oxtails are notoriously fatty) and discard (not down your sink).

The Ultimate 5 Alarm Curry Chicken Recipe.

There’s something very WRONG about a Curry Chicken which is not spicy (IMHO). However what we’re about to make here is simply insane when it comes to raw heat.. so be warned. With an abundance of hot peppers in my garden and with my luv for spicy foods, I thought I’d share what I call my 5 Alarm Curry Chicken recipe with you. Packed with deep flavors of a good curry and the added heat from organically grown peppers, this curry chicken is absolutely delicious.

You’ll Need…

3-4 lbs Chicken (cut into pieces)
1 teaspoon salt
1/4 teaspoon black pepper
1/2 small onion (diced)
3-4 cloves garlic (diced)
1 heaping tablespoon Caribbean Green Seasoning
1/4 teaspoon black pepper
1/2 large tomato (diced)
2-3 tablespoon vegetable oil
2 habanero peppers (sliced)
2 scotch bonnet peppers (sliced)
1 fatali pepper (sliced)
4 dried cayenne peppers
1/2 teaspoon cumin seeds
1/2 teaspoon coriander seeds
2 tablespoon Curry powder
2-3 Carolina Reapers (cut in half)
1 cup water
1 scallion (chopped)
3-4 leaves shado beni (optional – chopped)
1 tablespoon chopped cilantro (chopped)

Important: If doing this recipe gluten free, be sure to go through the entire list of ingredients to make sure they meet with your specific gluten free dietary needs. Especially the curry powder you use as a some may have flour as a filler.

Let’s start by seasoning the cleaned chicken (I used legs and thighs which I cut into small pieces .. remove the skin and fat as best you can). Place the chicken pieces in a large bowl, followed by the salt, black pepper, tomato, Caribbean Green Seasoning, Habanero peppers, scotch bonnet peppers and Fatali pepper. I included the seeds of the pepper as I wanted the raw heat. Remember to wash your hands with soap and water immediately after handling such hot peppers. Stir well and allow to marinate for at least 1 hr in the fridge.

 Heat the vegetable oil in a heavy pot (I used a cast iron pot) on a medium heat, then go in with the onion and garlic.. turn the heat down to as low as it will go and cook gently for 2-3 minutes. Then add the dried cayenne peppers along with the coriander and cumin seeds. Heat still on low, cook for a further 2-3 minutes.

 It’s now time to add your favorite curry powder. I have a blend I make, which is based on the Madras curry blend. Mix well and cook for 3-4 minutes or until the rawness of the curry is cooked out… it gets darker in color and the spices which makes up a good curry powder is allowed to bloom. You may need to add a bit more vegetable oil.

It’s now time to crank up the heat to high and add the seasoned chicken to the pot. Stir well to coat in the curry base we created. Yes, it’s fine if the marinade goes into the pot as well. In the same bowl you marinated the chicken, swish around the cup of water to pick up any remaining marinade and set aside for use shortly.

Turn the heat down to medium, cover the pot and cook for about 5 minutes. At this point you may add the remaining Carolina peppers (if you so desire using) It will spring it’s own natural juices. Now remove the lid off the pot and take the heat up a bit to burn off any liquid in the pot. This step will intensify the curry flavor onto the chicken pieces. Be sure to have the fan above your stove on or at least open your kitchen window or risk being choked by the strong peppers.

When you can see the vegetable oil we started off with at the bottom of the pan, you may now add the water, along with he scallions and shado beni. Bring to a boil, then reduce to a simmer and cook for about 10-12 minutes.

The gravy should be somewhat thick at the point (it will thicken with the residual heat of the pot as it cools) and the chicken fully cooked (depending on how large pieces you used). Taste for salt (adjust) and top with the chopped cilantro.

There’s no mistaking that this is a very SPICY curry chicken dish and to be honest, not for most people. However if heat is your thing, you’ll love this 5 Alarm Curry Chicken dish. You can certainly add more or remove some peppers or play with different varieties of peppers if you wish.

Simple Garlic Rosemary Roasted Chicken Recipe.

There’s something so comforting when you enter a home/kitchen and there’s a chicken roasting in the oven. A scent that immediately captivates yours taste-buds and then the eager anticipation of dinner kicks in. This here Garlic Rosemary Roasted Chicken will truly impress your family and friends, but be warned as the neighbors may just show up at your door if there’s a widow open or you have the fan/vent on in the kitchen, as you prepare this one.

You’ll Need…

1 chicken (about 3-4 lbs)
1 tablespoon rosemary (plus more for stuffing)
4 cloves garlic (crushed)
3/4 teaspoon salt
1/4 teaspoon black pepper
1 lemon (zest and juice)
2 tablespoon olive oil
2 pimento peppers

Finely chop the rosemary (no stems) and one of the pimento peppers. then add it to a bowl with the olive oil, salt, black pepper, garlic, lemon zest and lemon juice. Mix well.

Now cover the entire (clean/trimmed) chicken, with this marinade. I dabbed it on with a small brush.

You may place one of the used lemon pieces in the bird’s cavity, along with any remaining marinade and rosemary you may have left back. Feel free to top the chicken with more salt and black pepper as well as in the cavity. I didn’t. However I did slice the remaining pimento pepper in half and stuffed it in the chicken.

Place the chicken (I used a cast iron pan) into a preheated 400 F oven on the middle rack. No I did not tent or cover the chicken with foil. But you may do so for the first 30 minutes if you so wish.

Using a spoon, I tipped the roasting pan to a side and basted the chicken with the oils on the bottom every 15 minutes or so. This will keep the chicken nice and moist and help with developing a lovely golden color. After about 1 hour, this chicken was fully cooked/roasted. Keep in mind that if you use a bigger chicken it will take longer. I forgot to mention (watch the video below) I did tie the legs of the chicken with kitchen string and I tucked the wings below the bird to help keep it stable and to assist in even browning.

Allow the chicken to rest for about 10 minutes before you slice.

Yes you may work the marinade below the chicken’s skin but to be quite honest, I’ve done so in the past and for the work, it’s not worth it… as I never really see (taste) a difference. Maybe tv shows got us believing it makes a huge difference?

  1. Preheat oven to 400 °F (200 °C).
  2. In a small bowl, mix rosemary, garlic, chopped pimento pepper, lemon zest and juice, olive oil, salt, and pepper.
  3. Brush the marinade all over the chicken and inside the cavity; stuff with extra rosemary and lemon pieces. Tie legs and tuck wings.
  4. Place chicken breast-side up on the middle rack; roast uncovered. Baste every 15 minutes with accumulated juices.
  5. Roast for about 1 hour, or until the internal temperature reaches 165 °F (74 °C) in the thickest part.
  6. Let the chicken rest for 10 minutes before carving to retain juices.

Ultimate SlowCooker (CrockPot) Curry Goat Recipe.

With such a busy lifestyle we tend to live today, it’s always nice to have a comforting home-cooked meal waiting for us when we get home. With that in mind I decided to start exploring ways to tailor some of our classic Caribbean dishes for being prepared in a slow cooker (or crock pot). With this slow cooker Curry Goat, you’ll get that lovely Caribbean ‘curry’ with fall-of-the-bones tenderness mommy raised us on. I highly encourage you to give this method of cooking curry goat a try.

You’ll Need…

3 lbs goat
4 large potato (cut in 1/4s)
1 scotch bonnet pepper (cut or leave whole to control the heat)
2 tablespoons Caribbean Green Seasoning
2 tablespoon curry powder
1 large onion (diced)
5 sprigs thyme
4-6 cloves garlic (smashed)
3-5 thin slices ginger
8 pimento berries (aka allspice berries)
1 large tomato (diced)
3/4 tablespoon salt
1/4 teaspoon black pepper
2 scallions (chopped)
2 tablespoon water

I used goat meat with the bones as I find the flavor of the finished dish is much better when bones are used as compared to using boneless goat. This recipe will work great with lamb as well. Please get your butcher to cut the goat for you as the bones are VERY tough and will do damage to your kitchen knives. Wash and dry the goat and get ready to start. BTW, remove any big pieces of fat and discard.

Basically you’re adding all the ingredients to the goat (in the slow cooker) and give it all a good mix. I used potato in this curry goat as it’s a great way to stretch the dish for more people. Cut the potato into 1/4’s as they will want to fall apart during the lengthy cooking process.

The curry powder I used was my own blend, but I highly recommend Caribbean curry powders, especially the Madras-like blends. Or use your fav! I did slice the scotch bonnet pepper as I love my curry goat with a little ‘kick’. If you wanted you could add the scotch bonnet pepper whole, but try not to break it while cooking/stirring or you’ll release the beast (heat).

Remember to wash your hands with soap and water after handing such hot peppers like Scotch Bonnets. The tomato may seem out of place (for some people) but I assure you that it will add an acidic balance to the richness of the curry. There’s no need to allow this to marinate if you’re in a rush as it will cook slowly for 5 hrs and infuse the goat with that classic curry flavor.

With 20 minutes to go I opened the slow cooker and did a few things (cooked for 5 hrs as mentioned above). Tasted for salt and adjusted. But before that, you’ll notice a ton of fat at the surface (goat is very fatty), try your best to skim that off and discard (you can use a paper towel to skim that off easily). Do not pour this down your sink or it will clog your plumbing. Remove the scotch bonnet pepper if you had it in there whole. If the gravy is a bit runny you can cook uncovered for a further 30 minutes, but do bear in mind you can always crush a couple pieces of the potato to thicken things up.. also it will thicken naturally as the curry goat cools. Top with some finely chopped Cilantro (about 1 tablespoon – not mentioned in the ingredient list) and enjoy.
