Over the past couple years I’ve shared a few recipes which I’ve coined as being “Ultimate” and with the popularity of this roti and the amount of requests for the recipe over the last few months I strongly believe it deserves to join the other cast members in the ultimate series. Growing up in Trinidad and Tobago dhalpuri was one of those special dishes which was made the occasional Sunday morning or when the first choice – pelau wasn’t made for a beach lime. I still recall the strong aroma of geera (cumin) roasting before it was ground and added to the dhal filling for the roti, emanating from my great aunt’s house next door. Not sure if I was one of her’s faves, but I do recall always having a portion reserved for me (her curry potato was ah bess). When I wasn’t causing trouble with my brother… I was a good boy and everyone loved me ๐
For this recipe I got my mom’s help , so let’s give moms some props!
There are a few steps in making dhalpuri roti, so I do hope my explanation below is not too confusing. We’ll start with the filling, then the dough and close off with putting everything together and cooking the actual roti.
You’ll Need…
For the filling
1 teaspoon salt
1/4 teaspoon turmeric
2 cloves garlic
1 teaspoon ground roasted geera (cumin)
2 cups split peas (dhal)
1/4 of a scotch bonnet pepper (or any hot pepper you like)
For the dough (actual roti)
3 cups all purpose flour
pinch fast acting yeast
1/4 teaspoon salt
2 tablespoon baking powder
water (see note below)
* 5 tablespoon vegetable oil (for brushing the roti while it cooks)
Notes: We ended up using close to 1 and 3/4 cups of water when making the dough. Start with about 1 cup and add as necessary… the goal is to achieve a smooth, tender dough which is a bit firm (hold it’s shape). With the roasted geera, traditionally that’s roasted the same time the roti is being made (grains are roasted then ground) to really release the oils and aroma. But in my case I used the pre-packaged ground (roasted) one.
Making this roti can be a bit messy, especially if you have any break while cooking and with the use of the oil you’ll be brushing onto it it cooks… it may splatter onto your stove. Be prepared for some cleaning when the stove cools.
The first thing we need to do is prepare the dhal, since it needs to cool before we can work with it. Quickly sort through the 2 cups of split peas to see if there’s anything foreign among them (twigs etc – remove), then give it a good wash. Place about 5-6 cups of water to boil in a deep sauce pan and add the split peas and turmeric to the boiling water. Reduce the heat so it’s at a rolling boil and cook for about 20 minutes. NOTE: If you’re using a food processor as I did, allow it to cook for about 25-30 minutes. If using a traditional food mill, cook for the 20 minutes I mentioned.
Then drain and set aside to cool.
After you’ve put the boiled dhal (split peas) to cool, it would be a good time to start working on the dough. In a large bowl (I’m sure you can use a food processor as well – providing it can make dough) add the flour, salt, yeast, baking powder and start adding water. Knead to aย firm consistency… keep adding water as necessary. Work to form a huge dough ball, then cover the bowl with a tea towel or plastic wrap and allow it to rest for about 20 minutes. (pay attention to time as you don’t want the dough to over-rest)
Let’s now work on the split peas filling. I used a food processor and ran into some problems as I tried to work all at the same time and it just wasn’t happening. So I then divided it into 3 batches which was a lot easier to get to the consistency I wanted.
Place all the ingredients for making the filling into the food processor or food mill and work until you have a no whole peas or large pieces. I guess the ground peas should look similar to bread crumbs… if you have any full grains of dhal in the mix it may rip the roti while cooking. If you’re using a food mill it will have a soft, smooth consistency as the mill really grinds it in a way the food processor can’t duplicate. If you’re not familiar with what a food mill is, see below- it’s the traditional device used in preparing the dhal filling.
The next step in to break down the main dough ball into six smaller balls, then fill them with the peas filling we just made. You will have enough filling left over to make about 4 more dhalpuri so you can either freeze this or make some more dough (or cut back on the amount of split peas you prepare).
Divide the main dough into 6 pieces and form six smaller dough balls. Here’s where it may get a bit messy… flatten out each dough ball in your hand (see pics below) to form a 6 inch circle, then dust with flour and add 4 tablespoons of the filling to each. You will have to make a sort of bowl shape as you keep adding the split peas filling. Then using your fingers, form to a ball shape and pinch to seal. I do hope the pics below helps with explaining this step.
Now it’s time to heat your tawa (baking stone) on medium/high heat and brush some oil onto it’s surface. On a flour dusted surface, roll out one of the stuffed dough balls we made. Turn, flip and keep rolling until you have a pizza like shape that’s about 12-14 inches in diameter and about 1/8 inch thick. Remember to consider the size of tawa you’ll be using, so you don’t end up with a roti that’s too big to fit on your tawa. I assume you could use a large non-stick frying pan if you don’t own a tawa but you may encounter a problem when trying to flip with the edges of the frying pan.
Be careful when placing the rolled out dough onto the tawa as it will be hot. After about 30 seconds, using your hand if you’re a pro or a couple spatulas flip the roti. Now give this side a quick brush with the oil. You may have to flip this a couple times. It will take a bout 4-6 minutes to fully cook and you’ll notice that it will start to “swell” or inflate as cooks. That’s a sign that it’s ready to be removed off the tawa. Repeat this step for the remaining 5 roti.
Yes, there are a few steps involved and you’re probably saying “this is exactly why I buy my dhalpuri”, but I assure you that it’s rather simple and I do hope the combination of my description and pictures above is easy to follow along. I would suggest placing these on paper towels to absorb excess oil and do wrap in paper towels or tea towel to keep them soft (the air tends to make them a bit stiff). For those of you who make dhalpuri may find that the instant yeast is a bit strange.. but I assure you that you’ll have a nice tender roti which will reheat as if they were just made. I’ve seen my mom not only wrap them in a tea towel, but place that into a plastic shopping bag to eat later that day. If you make a couple batches you can certainly freeze them. I usually place them (folded) into freezer bags and they keep for at least a month in the freezer. Then it’s just a case of nuking them in the microwave to reheat. However when reheating in the microwave, don’t put the full time at once. I usually do 45 seconds on high and depending on hot it is I then flip over and heat an additional 40 seconds.

I’m so glad I looked at your site today. I live in France where I cannot buy an all purpose flour to make dhalpouris. The French use their flour to make their delicious French bread which is made with “weak flour” from soft wheat. Hard wheat is cultivated to make flour for pasta only. Luckily I buy my mango chutney online from a firm which I discovered also sells flour for making pouris and chapatis so I’m hoping that this flour will work for me. Your recipe is very explicative, so I’m going to print it out, pictures and all, will let you know how it worked out.

This recipe turned out perfectly! I didn’t have a tawa so I made the rotis smaller and used a cast iron flat grill pan. For the people who said the roti was getting crispy i think you must be adding too much flour, or not enough water. The dough should be almost a bit sticky before it rests. Great recipe!

Tried once…did not come out good…maybe my dough…using cake flour here in South Africa..will that be the problem?
No, you cannot use cake flour. You have to use regular flour. Cake flour is strictly for cakes and pastries that you are baking. You cannot fry cake flour.

I’ve tried this a few times but each time the roti comes out hard and almost crisp and I cannot fold it or use it as a shell for my chicken curry.
Also it does not ‘puff up’ when I cook it.
Tawa is hot, using a good veg oil.
Maybe my dhal isnt ground down enough and when I’m rolling it out its creating little tears so the steam is escaping and not puffing up?

two reason why it may tear. 1 the roti is rolled too thin or (and I believe this may be the issue) the boiled ground dhal is not cooked enough or too coarse. Do yu recall what brand flour you’re using?

For years I have tried making dhalpuri, but was not successful. After trying your recipe, I am a pro at it now. I do not like the yeast in it so I use 1 tsp of baking powder for 1 cup of flour and it is a winner!

Hey Chris,since moving to Canada I have started putting a pinch of yeast as well in the dough,also I use a Very heavy bottomed skillet to make the rotis,as cleanup on the stove is less…Your recipe is exactly what I use..Moms’ know best right…lol.

These are very simple and thorough instructions for making dhalpuri. I may just add that when freezing you may try rolling the roti and wrap in plastic wrap. This will prevent them from breaking when they are being thawed.When thawing, cover with a paper towel/napkin. The roti will look and taste like freshly made roti.
I have used this recipe many times, and it is right on with the flavor! I initially had a hard time getting the boiled yellow peas etc to grind finely enough in order to roll out well, and I found a solution, in case anyone has had this problem ( it can affect how things rise too). After preparing the peas etc and boiling them, put them in the freezer, checking to loosen them up every 15 minutes or so, till they are hard like coffee beans, but still loose- not a big block. Once they are there, you can blend them in a food processor till they are very fine- fine enough to roll out a very large diameter dhalpuri that rises pretty well for me , though not as well as the video!

I tried this recipe. The dhal was overlooked in the 25 minutes suggested so it turned to the consistency of mashed potatoes in the food processor. The filling kept coming out while rolling out. The roti did not rise at all while cookin. I ended up with thick heavy unbendable flatbread unable to wrap up the filling without breaking up and making a mess.
I am a lover of dhalpuri so I will be definitely be trying this recipe.. your coconut bakes recipe came out great.

I know the best way is to use dhal and prepare it fresh, but I don’t have a food processor (yet) or a grinder not even a mortar or pistol (new to cooking) can I use chick pea flour? & if so how much.

Hello Chris… There are some things I do need to get to make my Dhalpuri roti a success. Yes one like a proper grinder two a tawa but I am in Europe and I have a glass top stove so I am also scared to put a heavy tawa if I could find one on the electric glass top stove. I am now in the process of looking for a separate gas stove and some sort of griddle I may have to look in a camping store for these things……… Any ideas?

Sali, you can use an electric griddle or a large fry pan with great success in making the roti , even if you do not have a tawa/baking stone.
Hey Sali, just read your post and I also have a glass top stove. I picked up a Kitchen Aid griddle at one of my supermarkets and it works great. It is round just like a tawa and its raised edge keeps the stove clean when cooking. Mine is non stick. It looks like a fry pan but with a shallow raised edge.

I also forgot to tell you, I add a squeeze of lime juice, and a 1/2 stick of butter to the flour, the lime juice seem to make the flour very soft to work with, I also brush my with some melted butter with some oil, I use 1/2 + 1/2 or each, give a yummy taste
I am so glad I found your website, I am a Trini girl and make my Trini dhalpouri and a mean curry, I love my Trini roots, I add a little more seasonings to my filling, like finely chopped chives, some curry powder and if I can find it some pimento pepper, gives the filling a little more kick. Definitely will try this out…been searching for roti recipe for too long…may try it this weekend.. Don’t have tawa or mill or processor but will find a way to crush the peas… I was shown how to before but I forgot… As you say though, the yeast is new.. But I’ll try..one question… There is fast acting n slow raising yeast? Where I am, I’m not sure I can be specific with that as things are in a different language.. Will see what other menu u have that I can try out…thanks again.

I tried making it once and failed MISERABLY!!! I messed up putting the dahl in the roti. I dunno. SO, I get my mom to make me dhalpourie… Besides, my cooking can NEVER beat my moms cooking. Im happy either way.

Hi Chris, I moved to the UK three years ago and use all of your recipes on a regular basis. I must admit I have never tried to make dhalpouri it always seem so much work and since I did not have access to a traditional mill I just never bothered. But I must say I am intrigued by the use of a processor and will definitely try this. Thanks alot for all that you do to keep these recipes alive. Susie

This does look absolutely incredible. I hope it's as easy to make as it looks. I think I will be trying this sometime this week and get my 11 year old son to help out in the cooking. I think he may be a great Chef one day so I am going to put him to the test.

This dhalpouri recipe is one I simply MUST try doing. The best rotis I've ever tasted in Barbados came from a shop in Hastings, The Ackee Tree. Gina always makes them with dhalpouri and I'd have them no other way. Now I can have a go at re-creating them at home, when there's snow outside! Wonderful. Thanks Chris.

I tell you nothing beats a nice fresh warm Dhal Roti and I like the picture method display as well, I think i made roti 3 times in my life but this is the best way it see it being done without being there in person.

I eh go lie eh Chris, i try this recipe out with alloo. I always had a problem trying to make dhalpuri. meh filling always coming out when i rolling it out. tried many many times before and finally gave up…right until i saw this. tried it with the aloo and the thing come out real good. i dont have a dhal mill so seeing how you did it in the food processor made me rel happy too bad. thanks for the detailed pics, my filling did NOT come out. thanks again. and ah go let yuh know how the rel dhalpurie come out.

Adore your site..it gives me inspiration every time – even though I like in Trinidad! I still can't get the burning sugar technique right – when I put the meat in, the sugar crystalizes – or it just tastes "sweet" rather than the deep meaty flavour everyone else seems to get. Sigh. only v make dal paratha but with wheat flour n a little smaller
n in some parts of india they add sugar n cardamom pwdr n they roast the paratha in lot of ghee

Living in The Bahamas we do not get the foods we are accustomed to in T&T – in other words on our way home there is no roti shop and the like to stop by to get these and other home style tasty delicacies – what that says is that 'the mountain must come to Mohammed' – lol – I've got a tawa (ah hope ah could find it – lol) so thanks to this and other recipes from Caribbean Pot – I'm on my way!

I use to help my friend make Dhalpuri roti about 30 years ago(I only rolled it) she moved I moved and we lost touch..then found her on F/B living in Brampton, Canada. (she was living in England) I forgot all about this recipe,but my children loved it along with sweet bread she used to make, now I HAVE the RECIPE OH what a suprise they will have thank you a million times, curry for Saturday I think..OH have you got the recipe for Sweet Bread thats the only name I know…
Hi Chris, I just had a dhalpuri a few weeks ago I went to the West Indies food store and around the corner there is a Trini Cafe after shopping I had a roti with curry chicken. This is in Philadelphia, in the U.S. so I was in Heaven and I have a Chinese Crested Dog who also loves roti and curry chicken but now I could make my own thanks to you and your Mum. I never really favored dhalpuri (I guess it's something about the texture of the groun split peas), preferring the smoothness of the other kind of roti (buss up shut?). But this looks like something I would try anyway, just to get a feel for making roti. And it looks pretty simple. Wow, am I the only one who doesn't "get it"? Do you actually roll out the pea filled ball into a pita looking shape, and then cook it? That dough ball you're rolling out sure doesn't look like there's anything in it. If there isn't, then how do you cook the pea filled dough? As is? Maybe if I had a cookbook….

Thanks for this recipe man. The last time i tried to make dhalpouri, the dough turned out so hard "ah nearly buss meh toe" when it slipped from my hands and fell on the floor. That Dhalpuri looks umm, ummm good. It's one of my favorite foods, but do not get a chance to make it much because of the peas business, but I make buss up shut a lot from your recipe. It's easy to make and I whip it up very quickly. Next time I will try the puri with the yeast you mentioned. Never made it with yeast before.

You know that I’ve been following your blog for quite some time. I like your practical approach in all of your recipes. The step by step photos certainly help a lot. Anyone who doesn't own a Tawa can use a Skillet, that's what I useeveryday because my Tawa was begining to burn my roti in the centre so I got rid of it. I also use a Silicone Brush to spread the oil over the roti. Thanks to your Mom, you really take after her as the saying goes. Bye my friend and God bless!

When I opened your sight and saw dhalpouri it was like I was in heaven, brought back those lovely times when I use to make dhalpouri. Never had a recipe but now that I have it I will certainly make them – nothing like a good trini dhalpouri. As for the coconut bake hooray!!! i cook a so so curry but the roti is always a problem.I never get the right texture…I end up buying the roti skins or flaps..
This is wonderful! I love Dhalpuri roti, followed a recipe, more than once, but it did not come out right, at all…but I know, that once I follow your steps, it will CERTAINLY, come out right, this time. The pictures, are a BIG HELP!

Oh Chris………….. I am sooooo happy you did this. I loooove dhal pourie, and just this week I bought split peas to do it. My grandmother used to make it all the time, and usually I will make aloo paratha with dhal, to soak up all that yummy goodness. But when I just want dry roti, this is what I will have. Traditionally here (Jamaica) we just use baking powder, so I am going to try the yeast this time!! Thanks, really appreciate it!!

Born & bread in T&T and living now in Australia for 45 years, I sometimes long for a good curry & dhalpuri. I cook curries, but never attempted to make dhalpuri. I will now. Thanks for the recipe.
Hey great simplified recipe for the Dhalpuri…. you forgot the magic ingredient in the Dhal mixture ….. SHADON BENI !!! Also if you use Channa instead of dhal you will get a softer roti that stays that way for a longer time……

Hi Paul, Never heard of SNADON BENI in the Dhal mixture before, how does it taste? And Channa instead of dhal never heard about putting that into the mixture, could you explain? Chris you did it again i were afraid to make roti, i always thought i would of ended up making flat bake lol but oh no i first tried my hands at sada roti and when i perfected it i tried making dhalpuri yes real roti, i were smiling and eating whole day, i even invited friends to show off. Love your recipes. My daughters father is Trini and he introduced me to the different foods many years ago. Now, I'm able to cook a few more on my own.
Thank you for post and sending these recipes. I have been without my very Trini mother for seven years. Intentionally not cooked for missing her so much. Everytime I read you posted recipes I find myself smiling remembering my mom showing and teaching. It amazes me how much I have forgotten. I often want to call her to ask how to make something…so the missing of her is not a hard when reading your post.

I have been involved with the West Indian community since 1965 and I always told people that until you eat and devour a delicious Dahlpuri roti you have'nt lived. i would kill for one and I know where to get them locally. Now that you have illustrated the method and how to.. I will definitely give it a try. Instead of a tawa I will use a griddle on my gaz stove and have full control. Wish us luck as I can smell the dahl and the cummin just writing this. Oh G-D dahlpuri roti for days!!

I was always a fan of tastes and sounds from Trinidad, however my first visit to Trinidad (certainly not to be my last) in 2009 left me in heaven…..doubles for breakfast, bake and shark, roti, corn soup etc. etc. , it have me a mamaguy meself thinking ah is a Trini…lololol!

The best food i am married to a trini so i learned from watching him and ther are some foods i can cook he never cooked Roti currents roll and many more. and i get a lot from the cook books and just paying close att. when ppl cooking. I can make a mean stew chicken ๐

Mmmm….Love Dhalpuri! It does seem like a lot of work, but really it's not. I use to help my mom on Sundays. She would make them a little smaller however.
Does anyone know where I can purchase a Tawa in Montreal?
Blu-Try a West-Indian store or Indian store. If you cannot get a Tawa, you can also use a Lodge cast iron pizza pan. I purchased one from a camping store but I see it is available from Amazon -http://www.amazon.com/Lodge-Logic-Cast-Iron-14-Inch-Pizza/dp/B0000E2V3X . It is actually better to use than the real tawa.

The best Dhalpuri roti I ever came across was sold at Piarco Airport before they built the new buildings. This was sold along with some of the best tasting doubles and alou pies. I miss that.
