Flavorsome Curry String Beans.


how to cook curry string beans 11Over the years I’ve grown very fond of vegetarian type dishes and if you recall, back in July of last year (wow it’s been almost a year) I shared a recipe for cooking French beans in coconut milk. Today we’re using the same beans (is there a difference between French and string beans?), except they’re called string beans in the Caribbean and we’ll be giving it that added “kick” of flavour with some madras curry powder. In case you’re wondering, YES there is a difference in the curry you get in the Caribbean as compared to the ones from India.

There are 2 things you can add to this dish to make a bit different. 1 You can add some coconut milk to it instead of the water mentioned in the ingredients list. 2. By adding some shredded pieces of salted cod (dry) it gives the dish another level of flavour. But trust-me, the recipe below will amaze you and anyone you share it with.

You’ll Need…

1 lb string beans (French beans)
1 tablespoon curry powder
1/4 hot pepper (habanero, scotch bonnet or any of your faves)
1/2 teaspoon salt
1/2 onion sliced
4 gloves garlic grated or crushed
3 tablespoon water to mix the curry
1 tablespoon vegetable oil
3/4 cup water

* My choice for curry powder has always been the “Raja Jahan Special Madras Curry” which you can easily get at any Caribbean food store if you live outside Trinidad and Tobago or online at Amazon.com.

Start by washing the beans and allow to drain. The next step is to remove both ends (stems) and cut into 1 1/2 inch pieces. For faster cooking time I usually then slice these 1 1/2 inch pieces down the middle (see pic below) using a pairing knife. But you don’t have to do this step if you don’t feel like it.

In a saucepan put the oil to heat on medium heat and add 1/2 of the onion and allow to cook for a couple minutes. Then take the curry powder and put it in a bowl with the 3 tablespoon of water (mix around). Then pour that into the pan and stir. Allow that to cook for a minute, then add the rest of the sliced onion, grate the garlic into the pan (or crush) and add the slice of hot pepper. Cook that for a few minutes until most of the liquid dries off, then add the sliced beans and stir around.

Stir thoroughly, add the salt and cook for a few minutes before adding the 3/4 cup of water. Once you add the water, turn down the heat to low, cover and cook for about 20 minutes. Stir about3-4 times during the cooking process.

The finished dish will not be as brilliant green as when you first started and please try to burn off all the liquid that we added. This is great with roti (sada and buss up shut) as well as rice and even breads. And there’s no reason why it can’t be a side dish at your next family dinner. Healthy and tasty, you just can’t beat this one.

    Does this recipe work equally well for what we call “Bodi Beans” in Trinidad? Seems like the recipe I have used once or twice from the Goya coconut milk can contained a little salt beef too & it was delicious!!

    I just want to add that like you, I am compiling a receipe book of all his favourite foods that i fix to pass on to my son, who, by the way, is also a great cook!! He is especially fond of curries & Trinidadian dishes!!

    I believe string beans have a string down one side which one has to remove, while french or green beans do not. We dont get string beans here anymore. I just plant stringless beans, dwarf or climbing. Thanks for the recipe and will give it a go some day.

    Glad to hear you’re feeling better. I made the curry string beans this weekend for a cookout. They turned out wonderful. I made 2lbs and just doubled the recipe (pretty much, a cook’s adjustment here and there). Well then a sad thing happened on delivery. I brought them in the house and went to put them on the breakfast bar and hit the pot on the bar and nearly all of them fell onto the floor:-(

    The little that were saved were tasted by all (small cookout) and stamped as excellent! I bought 2 more lbs on Monday and will be making them this week.

    I tried the curry chicken for Sunday"s dinner along with the bok choi and white rice. IT WAS A HIT WITH 2 FAMILIES WHO DINED THAT DAY!!!!! It was my first time using curry without grilling and I loved every minute of it. I added fresh carrots and peas to the chicken for those who did not want the bok choi. But they where asking for seconds and thirds of everything. Glad I'm here. Will tell my friends.

    ABSOLUTELY love all your recipes, have tried a few of the new ones, like the Stewed Pork and breadfruit dish and it was really tasty…fabulous. The curried string bean recipe featured today is exactly the way I cook it for my family using the Raja Jaha curry, which happens to be my favourite brand. I must say I love the way you explain and show pictures of every step to preparing a dish…I've personally invited few of my friends (those who don't know how to cook – and either to busy or ashamed to go learn how) I've tried your curry with the mustard my brother in law (who feel he's some big time cook) was skeptical but when he tasted it…it was the Bomb!     I've tried many of your vegetarian recipes and this one's a keeper for sure. I also substituted the green beans with long beans or "bora" which came out quite nice as well. Thanks for the great recipes! 🙂

    i never liked string beans even if they were stewed but then i tried this curry recipe and i eat it with roti it tastes delicious and my husband loves my cooking so much.

    This is a great recipe for summer BBQ's teamed up with fish or other vegetarian dishes or all alone. I gave this dish to the kids to create and it came out beautifully. Thanks for posting it and keep up the fine work

    yes bodi…i miss that. regular US beans just aren't the same. when i described them to a friend of mine from Thailand she said they sould like chinese long bean…. anybody to confirm?

    i think i will try this recipe tmorrow! oh and buss up shut i miss terribly! can't wait to try my hand at your post Chris..
    i think i'm a little too aggressive on dough, i can't ever seem to get the soft & fluffy results…any guidance?

    hey Chris, you know if you fry some salt fish first then add garlic and onion and of course yuh pepper throw in yuh curry to (bunja)or you would say fry up then add your string beans to fry in the mixture and just continue to cook it like you did it taste so good,or you could also do it like my mother does it she cubes seasoned breast and same direction as the other receipe applies fry in oil with garlic, onion, pepper add curry etc.hope you enjoy it

    Hello Chris! I am so glad I came across your site in a search!! My husband is from Trinidad and I wanted to cook for him since the area we live in (Rhode Island) it's hard to find real Trini food. I have tried your stewed chicken and fry bake … which I have done with success!     It's Gina here. We have someting in common; I'm a Taurus too! My birthday is this friday (May 7th).
    I would love to get that knife as a birthday present (hint hint) LOL :-).
    I do want to mention that I absolutely LOVE green beans and I will definitely be trying out this curry green bean dish. It sounds delicious! Everytime I think of green beans it reminds me of my sweet mama (God rest her soul); she would always have me snappin those beans on the porch, so she could make a big pot with red potatoes!     As an ardent fan of this site – the recipes brings tremendous help in the time of need. I love the recipe above but i gonna have some salt in it i.e. pickled pig tails or smoke bones or even some salt fish. I may even add some potatoes to lengthen the dish. Good work and have a nice day! 🙂

    My husband loves curried anything and since Bodi is not readily available, string beans would become my go to beans to replace my Bodi Curry!
