Gluten Free Side Dishes

Cherry Plum Chow (spicy pickle plums).

Took a drive down into Buffalo NY a few weeks back and came across these Cherry Plums at the Trader Joes, intrigued… so a package came home with us. Unfortunately they were a bit to tart for my liking and the texture wasn’t what I expected. I hoped they would have been a bit firmer and not as soft. Childhood Chris kicked in and a chow was born.

You’ll Need…

1 package cherry plums
3/4 teaspoon sea salt
1 lemon (juice)
2 cloves garlic (crushed)
Scotch Bonnet pepper (see notes below) thinly sliced
3 leaves shado beni (culantro) finely chopped
1/2 teaspoon black pepper
2 tablespoon water

Notes! I used an entire Scotch Bonnet pepper including the seeds and white membrane around the seeds. Use as much hot pepper as you can handle and the variety you can access or prefer. Should you not have lemon juice, lime will work as well. Should you not be able to source Shado Beni (chadon beni , culantro), cilantro (coriander) will work – about 1 tablespoon chopped. WARNING! Wear gloves and wash your hands with soap and water after handing such hot peppers as Scotch Bonnet.

Give the Cherry Plums (everyday North American Plums will work.. should I be able to source Caribbean type plums in the future, I’ll be sure to share that recipe) a wash, then (watch the video below) slice though the plums, hitting on the seeds inside as a guide. These cuts will allow for the spicy sauce to work it’s way inside.

Using a paring knife worked best for me.

Basically all you have to do now is place all the ingredients into a large bowl or jar and mix well. Remember to make it as spicy as you can handle. Yes, Habanero and Bird’s Eye peppers are great in this as well.

If there were stems on the cherry Plums, remove them at the start please.

Allow it to marinate or soak after you give it a good mix for about 30 minutes in the fridge before you dig in.

If you wanted to add some grapes (cut in half) or slices of apple in the mix, that would be delightful. Chow is meant to be spicy and the sort of spicy, herbal, citrus juice or marinade is prized to sip on at the end.

NO! I didn’t get a hint of Cherry in these Plums, however the Chow was excellent.

The Ultimate Mango Chow (pickled mango) Recipe.

Mango Chow.

After one taste of this mango chow I knew it would be something I’d be addicted to and making very often. On our last trip to the islands, my friend David introduced me to this version of the spicy mango pickle I grew up eating as a young fella on the islands. However, the Chinese preserved prunes (sweet and salted) gave it a unique color and to be completely honest.. a flavor unlike any “chow” I’ve had before. Luckily, my ‘foodie’ senses kicked in and I went though the recipe in my head… well my version.

Here’s my take on a recipe where the original I cannot own, but I did ask David and the Salisha (the person who made it for David) if they would mind if I gave it a crack… and share it with you all.

You”ll Need…

3 large green mangoes
3/4 teaspoon salt
3 jalapeno peppers
2 scotch bonnet peppers
8-10 bird pepper (bird’s eye)
4-6 cloves garlic
6 shado beni leaves (or 1/2 cup cilantro)
2 large limes (juice)
1 cup water
1 pack of Salted Prunes (check Chinese supermarkets)

Wash and peel the mangoes with a sharp pairing knife or potato peeler, then slice into stick-like pieces as in the pictures you see here on in the video below. Place the mangoes in a large bowl for mixing

Add the crushed garlic, salt, sliced Jalapenos and bird’s eye peppers, but first give then tiny cuts to release some of the flavor and heat of them.

Add the thinly sliced Shado Beni (Culantro) and remember you can also use chopped cilantro if you wish. I’d recommend wearing gloves and do wash your hands immediately after handling Scotch Bonnet peppers or any hot peppers as a matter o fact.

Preserved Sweet / Salted Prunes added!

Top with the salted prunes and add any missing ingredients to the mix. Give it a good stir to really combine all the flavors.

I’d make two important recommendations at this point. 1. Store in a glass container in the fridge (up to 2 weeks). 2. Try to have it marinate for a couple hours before you dig in.

Do keep in mind that as it marinates it will change in color and will adopt some of the salty elements of the Salted Prunes. Be sure to shake it often and feel free to add more sliced green mangoes as you work your way though them. It will be fiery!

Mango chow – the pleasure and the pain.

hot-mango-chowOne of my favorite snacks when mango was in season as a kid on the islands was mango chow. Even today, whenever we meet at family gatherings, there’s usually a bowl of chow in the midst.  I can still recall eating away at this piping-hot combination of tart fruit, garlic and herbs… balanced with the wonderful juice of a fresh squeezed lime or lemon. I guess you were thinking sweet and savory when you think “snack”.

Seems everyone I’ve met over the years makes this a bit different, but you can’t go wrong with my take on mango chow.

You’ll need…

1 green mango (near to ripe is best)

1/4 teaspoon of salt

dash of black pepper (optional)

1 tablespoon shado beni hot sauce (or 1/4 cup  cilantro or 1/8 cup of shado beni – finely chopped)

2-3 cloves of garlic (depends how much you like garlic)

1 lime or lemon

1-2 habanero peppers (or your favorite hot pepper)

1 shallot (optional)

Let’s get started. In a bowl, place the salt, sliced pepper, garlic and shallots. For a stronger flavor, instead of slicing the pepper and garlic, crush it with the salt using a pestle.

Wash and peel the mango using a pairing knife or potato peeler. Then slice into wedges and place in the bowl. Remember that the mango will have a hard core (seed) so you won’t be able to slice all the way through. Now add the shado beni hot sauce if you have some stored, or add the fresh shado beni / cilantro.

Basically the only ingredient you should have left is the lime or lemon. Squeeze the lime into the mixture you have in the bowl and toss around using a spoon. Sometimes we’re tempted to use our hands, but remember that you used those hot peppers so it may leave your hand burning if you do.

Taste for salt at this point and add as necessary. Depending on how tart the mango is, you may require some more salt. You have 2 options now.. dig in or cover with plastic wrap and let it marinate in the fridge for a couple hrs. If you decide to have it marinate, be sure to toss it around every 30 minutes or so for best results.
