    Baigan and Aloo (eggplant cooked with potato) was one of my favorite things to eat as a kid growing up on the islands.. except when mom would put saltfish (salted cod) in it. According to her (my adult self agrees 100%) makes it more ‘sweet’ (tasty) and though mom never made this dish with shrimp, it’s now one of my go-to recipes when I’m homesick. Granted it’s not a ‘pretty’ dish, but I assure it you’ll fall in love with it.

    This is definitely one of those dishes that takes me back to my childhood.     Pumpkin and shrimp are two things mom struggled to get us to eat as kids, but as an adult I can’t get enough. Looking back I wish I had started eating pumpkin from a younger age as the pumpkins mom would use came directly from the small garden we had at the back of our home in rural Trinidad. Grown organically and under the brilliant Caribbean sun… I still recall mom commenting “gosh this pumpkin cook real gud” every time she made a pumpkin dish.

    Shrimp Chow – Spicy Shrimp Cocktail?

    “Dad, can you make me chow?” No Mango! “How about shrimp?” That was the brief discussion between Tehya and I a few weeks back when she got her routine craving for mango chow. A spicy pickle usually made with green (tart) mangoes, or any of the variety of fruits we have in the Caribbean. Had to admit, it was a brilliant idea. We both enjoy shrimp cocktail and with the sort of spicy base.. could this be the “Caribbean” version of shrimp cocktail?

    Shrimp Wontons or Wantons is one of those snacks I grew up eating at the many Chinese restaurants and food trucks in San Fernando Trinidad as a young fella. Fresh from the fryer and dipped in a basic sauce of soy sauce and pepeprsauce, it was the ideal thing to eat after dad, my younger brother and I would go watch Kung Fu movies on a Saturday afternoon. It was usually the appetizer for an amazing full-on Chinese meal, as you could ONLY get in Trinidad and Tobago.     I’ve had a weakness for these delightful fried dough balls served with spicy chutney, ever since my school days. I’d guess that at least 50% of my weekly allowance went directly to the vendors outside our school compound, selling pholourie and other popular street foods in San Fernando (Trinidad). There was one spot where they sold them straight from the fryer dripping in hot grease, but the lines were always longest there. Would explain why as soon as the recess or lunch bell would go off, it was like an Olympic 100 meter dash to get out the gates and at the front of the line. I dare Usain Bolt to get in our way or try to outrun us.

    Over the years I’ve shared countless recipes for making jerk marinades, sauces, how to make finger-licking Jamaican jerk in the oven and classic jerk on your grill and bbq. As we continue our annual July Month Of Grilling I thought I’d shift focus and share a gluten friendly version of this classic Jamaican jerk marinade for our friends who deal with gluten intolerance.     At a recent dinner party I was challenged by friends to come up with a firecracker shrimp recipe, but with a Caribbean twist. Being that “challenge” is my second name.. I’m very competitive, a few days later I was in the kitchen loaded with ingredients to take that firecracker shrimp we enjoyed to a whole new level. They were good, but missing were a herbal note and true Caribbean sunshine (heat).     When you grow up in the ‘country’ areas on the islands, you’re sure to have a kitchen garden where most of the vegetables, herbs and peppers you use in in the kitchen, comes directly from. My brother and I were gardeners from a very young age (not by choice.. especially when we wanted to run football and not tend to plants). Looking back, it seems we always had some sort of beans planted in that small plot of land at the back of our home. Maybe this is where my love for beans of all types originated? In this recipe we’ll use two of my favorite ingredients, string beans and shrimp along with that lovely curry base, this will definitely be delightful.

    In the Caribbean we have an abundance of wonderful seafood in our waters, including some of the most tasty shrimp you’ll ever enjoy. Sadly, I don’t recall this dish ever being made by mom or as a matter of fact.. I had never seen it done on the islands when we were growing up.
