Oxtail Braised In Guinness.

 

After posting a pic of this Guinness braised oxtail on the Facebook fan page a while back, I’ve been overwhelmed with requests for the recipe. Just when you thought I forgot or ignoring those requests, here it is. Absolutely one of the best oxtail recipes I’ve shared to date and though it’s not something you think when you think about Caribbean cuisine, with our love for both Guinness and oxtails… yea, I assure you this will be a hit and fits well with our culinary culture.

It does take some time to cook, but if you have a slow cooker you can create the base on the stove and let the slow cooker do the rest. If using a slow cooker, you may find that oil may accumulate at the top – spoon off. And those of you who own a pressure cooker.. do your thing. It will cut back on the cooking time.

You’ll Need…

2 lbs oxtail (cut/trimmed of excess fat)
1 can tomato paste (156 ml / 5.5oz)
1 teaspoon salt
1/2 teaspoon black pepper
1 large onion
1 1/2 cups diced celery
2 large carrots
2 cans Guinness (see note below)
1 cup water
4 sprigs thyme
2 bay leaves
1/2 teaspoon oregano
1 habanero pepper (any hot pepper you like – optional)
2 tablespoon vegetable oil

Notes. The hot pepper is optional, but I love the heat and additional flavor. I used Guinness draft but I know we get the extra stout in the Caribbean, which is a bit stronger… rest assured that the alcohol will burn off so you don’t have to worry about that. If you want to start off with a good flavor base, replace the vegetable oil with coconut oil.

Wash the pieces of oxtail in some lime or lemon juice and cool water. Drain and pat dry with paper towels. Heat the oil in a deep, heavy pan on med/high heat and start browning the pieces of oxtail. Try not to crowd the pan (BTW if you want you can use 3 lbs of oxtail to feed more people if you wish – simply adjust the salt) or it will release a ton of moisture and you’ll notice it will start to boil and not brown. It should take about 10-15 minutes, remember to keep turning the pieces of oxtail.

Remove the oxtail pieces and set aside for a bit. Turn the heat down to low and add the onion, celery, black pepper, oregano and thyme (leave on the stem if you wish as you can remove it later on). Allow this to cook on a very low heat for about 3-5 minutes.

Now add the tomato paste and give it a good stir. We’re trying to release the natural sugars in the tomato and create a rich base. You’ll notice that it will go darker and there will be a lovely scent in your kitchen. Cook for about 2-3 minutes – keep stirring.

Return the pieces of oxtail to the pot as well as the carrots (cut the carrots in huge chunks), bay leaves and salt. Give that a good stir, turn up the heat to high and add the 2 cans of Guinness. Stir well and bring to a boil with the lid covered. When it comes to a boil, lower the heat to a rolling boil (low) and let cook for about 20 minutes. This is when you’ll add the whole habanero pepper to the pot. Remember to keep it whole for flavor and not the heat. Burst open near the end if you want the excitement of the heat.

After 20 minutes it’s time to add the water and bring it back up to a boil (this would be when I would add everything to a slow cooker or pressure cooker if that’s your plan). When it comes to a boil, reduce the heat to a gentle simmer and allow to cook for about 3 hours or until the meat starts falling off the bones. Continue stirring every 15 minutes or so and if you notice you’re running low on liquid.. add a bit more water. After 3 hours it should be tender… take out the sprigs from thyme, the hot pepper (if you don’t want the heat) and turn up the heat with the pot uncovered to thicken up the rich gravy.

If you want to add a bit more Caribbean influence you can always add a few pimento berries to the pot and a 1/2 teaspoon of green seasoning paste. This is great on rice, mashed potato, roasted breadfruit, ground provisions… even roti or bread. I did a cassava mash, which I’ll share with you in the next couple days.   4. Made this again yesterday in the slow cooker 5hours on high falling off the bones. So delicious I use 3 and half lbs of oxtail. Feeds 4 . Any sauce left I add a few more veg and eat as rich soup . Habanero pepper just sat in the top adds beautiful flavour and kick x thanks again

    1. Hey Josie I diced up some sweet potato in mine. You can also use Yam. That should neutralize any bitter taste you may have.

  10. Mr. Chris, any idea how long I would leave this in a pressure cooker to cook? Any additonal hints when using the pressure cooker to cook this recipe? Bought a new Presto stainless steel 6 quart and thought I would try this as my first dish in the new pressure cooker.

  15. For Valentines Day, I always cook chicken marsala with angel hair pasta. For desert we have individual chocolate lava (molten) cakes. My husband is Jamaican and loves caribbean food. So once and awhile I like to cook something that we don't eat often. He just adores this dish served by candlelight with a bottle of champagne.

  16. Well I did indeed try the recipe, including the cheesy mashed cassava. However I couldn't get oxtail at the time so I used lamb neck slices. I also finished it in the pressure cooker after cooking it for one hour in a large saucepan. Needless to say, it was wonderful! I ended up only getting once piece of lamb neck! The day I cooked it (Carnival Monday here in Trinidad & Tobago) I had a visitor and her two sons over, and between them and my two children, they virtually "licked the platter clean!" So I ended up getting just one piece of meat! Nice recipe.

  17. I don't really have a favorite dish for Valentine's day. I cook based on what is available at that time of year, which varies widely because we move around so much. Last year covered a chicken with flour tortillas after we marinated it overnight in a mixture of beer and hot sauce. We cooked it in a toaster oven at 350 degrees for about an hour, turning it around every 30 minutes so it would cook evenly.

  18. My fav would be a nice spicy Dhal soup and then garlic and thyme roasted veggies and roasted chicken dessert would be a meadly of read fruits merangue and whipped cream mmmm.

  22. My favorurite valentines dish is curried snapper with rice and peas, fried plaintain and salad. Then I would have chocolate rum cake. Washed down with pink champagne and strawberries!!!!

  25. Oooooh for Valentines day I made a lovely Curry Shrimp on Basmati rice with a Cherry tomato & Watercress salad, we had a spicy Bruscetta appetizer infused with Caribbean flavors. We toasted with sorrel splashed Champagne & crowned it all off with some yummy coconut cake… It was delightful!!!

    For us we, start with homemade Trini style corn soup, pepper shrimp and oysters like the ones around the Savannah in St. James. Main couse is Chinese-trini style beef stir fry with noodles. Dessert I make the pound cake with coconut topping and a nice espresso shot with some Baileys for a kick.

  28. My Valentine’s Day dinner was really special because my hubby is alleric to seafood. He cooked & braved through it just for me. I had Shrimp & Lobster Scampi with Angel Haired Pasta with creamy garlic sauce. Very tasty I must say. I also had a arugula salad with mussels & cranberry vinegarette dressing. My meal was one for the record books!!

  32. Everyday is valentines day for me and my husband we don't wait till Feb14th to celebrate and we eat whatever we feel like on that day lol had roasted breadfruit blackfish buljoul (viny dish) and sorrel juice. ( A meal all the men in my family love)

  36. For Valentines Day i love to whip up something special, usually whatever I’m in the mood for. Rice with pigeon peas with sofime pernil, lasagna, or some escabeche which is codfish with green bananas and avocado, its a salad. Then I’ll make either a flan or a strawberry topped cheesecake, or a tres leches cake..

    had burger and fries and wings. Not exacly my choice for valentine's night if I am dinning. I love chinese food.

  38. hi im a vegetarian and i would like to try this with soya. On valentine's dinner i like a vegi fry rice with stew soya , tofu with brocoli and baked sweetpotato. for desert we go with an eggless cake. we then have a non-alcoholic wine.

Hey Chris i have done your oxtail recipe very impressed ,plus i like most of your your recipes i don't use all the ingredients i experiment. and mix and match,I did a 3/4 side of belly pork,last night,i dried it sprinkled it with coarse sea salt and some veg oil rubbed it well into the scored skin put it in a pre heated oven for an hour as high as it would go, then turned it down to 130deg's for about 3 plus hours ,done didn't need a knife to cut it,it just fell apart.pls tell how you do pork belly ? have a nice day m8.

  43. I am Jamaican. Jamaicans love Guinness. Jamaicans also love oxtail, especially for Sunday dinner so this is a try for me…Only difference is that our Guinness here is bottled and probably tastes better…lol…lol…

  60. Fav valentines day dish? hmmm.. i'm not sure. fave valentines day drink – cupid's kiss. nothing like some bacardi w/ white creme de cocoa and white hcocolate shavings to make valentines day sweeter!

  61. my favourite herb is Shadon Beni, it gives any meat a great flavor and for me is the best seasoning really gives that Trni flavor to any meal!
