Chadon Beni Honey Lime Roasted Chicken.

While it’s currently summertime and most of us in northern climates prefer to not have our indoor oven going, as explained in the video below this recipe can also be effectively done on an outdoors grill. If you’re doing this outdoor on the grill you can do so in a baking dish or grill the seasoned chicken directly on the grilling surface (heat source of your choice, however charcoal or wood will give you better results).

5 lbs chicken (skin on)
3-4 tablespoon olive oil
zest 1 lime
3 limes (juice)
2-3 tablespoon honey
1 teaspoon sea salt (adjust to your liking)
1 teaspoon black pepper
3 tablespoons finely chopped chives
3 tablespoons finely chopped Chadon Beni
5 cloves garlic (crushed)
1 tablespoon pepper flakes

Notes! May I recommend that you follow along with the video below as much more about the recipe is discussed there. Should you want to add a teaspoon of grated ginger and a tablespoon of light Soy sauce, they will definitely be excellent additions. I used a variety of cuts of chicken in doing this recipe, without using chicken breast as it will dry-out in the oven. With a combo of wings, drums and legs with the thigh and back attached, you’ll end up having juicy flavorful pieces of chicken. The large drumsticks were cut down the thickest parts for even cooking. And while I removed any fat I could see, I did leave the skin on.

Combine all of the ingredients (except the chicken) in a bowl and give it a whisk. Reserve 1/4 of this marinade, which we’ll treat as a dressing later on.

If you cannot source Chadon Beni (culantro), you may substitute Cilantro (coriander) instead.

Pour the marinade over the chicken pieces, mix well to coat and allow it to marinate for no less than 2 hours. * Remember to reserve 1/4 of the marinade for later.

If you wanted to use 3 tablespoons of brown sugar, agave, maple syrup or any sweetener you prefer instead of honey, you may do so.

Preheat your oven to 375 F. Then place the roasting pan with the chicken on the middle rack uncovered.

After 20 minutes, flip the chicken pieces and do so every 20 minutes or so moving forward, until they’re fully cooked.

After an hour and 15 minutes the chicken should be fully cooked and golden! Shut off the oven, drizzle on the reserved marinade and enjoy! Serve with some of that Tomato Rice, Okra Rice or Coconut Rice I shared a while back.

Quick Herb Roasted Chicken.

There’s something so comforting about oven roasted (or bake chicken as my mom say) chicken. From the wonderful scent of it in the oven, to the rich notes of herbs on the crispy skin and that warm juicy interior. Herb Roasted Chicken does not have to be complicated.. allow me to prove that to you in the following few simple steps.

You‘ll Need…

6-8 chicken legs
1 teaspoon salt
2 tablespoon olive oil
4 large cloves garlic
1/4 teaspoon black pepper
3/4 teaspoon dried thyme
3/4 teaspoon dried parsley
1/2 teaspoon coriander seeds
3/4 teaspoon rosemary
3/4 teaspoon dried pepper flakes
3/4 teaspoon oregano (optional – I forgot to add it in this recipe)

IMPORTANT! If doing this recipe gluten free, please go through the full list of ingredients to make sure they meet with your specific gluten free dietary needs.

Crush the garlic with the salt and coriander seeds, then add the rest of the spices, olive oil etc mentioned above.

Mix well, and coat the chicken pieces with this rub. I cleaned off as much of the fat off the chicken legs as I could, but I did leave the skin on. You’ll thank me later for that crispy skin. Be sure to massage both sides of the chicken with the herb marinade.

Place on a baking tray (line with foil or parchment paper to make cleaning easier after), I didn’t and it took a while to clean the tray after.

Into a preheated 400 F oven – middle rack (uncovered). 1 hour and 10 minutes later and you’re done. No need to baby sit this. Do adjust to cooking time according to the size of your chicken pieces.

Simple Garlic Rosemary Roasted Chicken Recipe.

There’s something so comforting when you enter a home/kitchen and there’s a chicken roasting in the oven. A scent that immediately captivates yours taste-buds and then the eager anticipation of dinner kicks in. This here Garlic Rosemary Roasted Chicken will truly impress your family and friends, but be warned as the neighbors may just show up at your door if there’s a widow open or you have the fan/vent on in the kitchen, as you prepare this one.

You’ll Need…

1 chicken (about 3-4 lbs)
1 tablespoon rosemary (plus more for stuffing)
4 cloves garlic (crushed)
3/4 teaspoon salt
1/4 teaspoon black pepper
1 lemon (zest and juice)
2 tablespoon olive oil
2 pimento peppers

Finely chop the rosemary (no stems) and one of the pimento peppers. then add it to a bowl with the olive oil, salt, black pepper, garlic, lemon zest and lemon juice. Mix well.

Now cover the entire (clean/trimmed) chicken, with this marinade. I dabbed it on with a small brush.

You may place one of the used lemon pieces in the bird’s cavity, along with any remaining marinade and rosemary you may have left back. Feel free to top the chicken with more salt and black pepper as well as in the cavity. I didn’t. However I did slice the remaining pimento pepper in half and stuffed it in the chicken.

Place the chicken (I used a cast iron pan) into a preheated 400 F oven on the middle rack. No I did not tent or cover the chicken with foil. But you may do so for the first 30 minutes if you so wish.

Using a spoon, I tipped the roasting pan to a side and basted the chicken with the oils on the bottom every 15 minutes or so. This will keep the chicken nice and moist and help with developing a lovely golden color. After about 1 hour, this chicken was fully cooked/roasted. Keep in mind that if you use a bigger chicken it will take longer. I forgot to mention (watch the video below) I did tie the legs of the chicken with kitchen string and I tucked the wings below the bird to help keep it stable and to assist in even browning.

Allow the chicken to rest for about 10 minutes before you slice.

Yes you may work the marinade below the chicken’s skin but to be quite honest, I’ve done so in the past and for the work, it’s not worth it… as I never really see (taste) a difference. Maybe tv shows got us believing it makes a huge difference?

  1. Preheat oven to 400 °F (200 °C).
  2. In a small bowl, mix rosemary, garlic, chopped pimento pepper, lemon zest and juice, olive oil, salt, and pepper.
  3. Brush the marinade all over the chicken and inside the cavity; stuff with extra rosemary and lemon pieces. Tie legs and tuck wings.
  4. Place chicken breast-side up on the middle rack; roast uncovered. Baste every 15 minutes with accumulated juices.
  5. Roast for about 1 hour, or until the internal temperature reaches 165 °F (74 °C) in the thickest part.
  6. Let the chicken rest for 10 minutes before carving to retain juices.

The Simplest Oven Roasted Chicken Ever (recipe)!

Oven roasted chicken (baked chicken as it’s sometimes called in the Caribbean) is infamous for being dry and somewhat bland. However in this recipe I’ll not only show you how simple it is to a make a moist oven roasted chicken, we’ll apply some Caribbean seasonings (herbs) which will definitely excite your taste buds. This recipe is based on the method of seasoning chicken as it’s normally done in the Caribbean for stews, curries and grilling.

 

You’ll Need…

1 4 lb chicken
1/4 teaspoon salt
1/4 teaspoon black pepper
1/2 lemon
1 tablespoon Caribbean green seasoning
2 tablespoon olive oil

*Notes:  To add a little kick to things, you can add some finely diced scotch bonnet pepper or a little peppersauce (hot sauce) to the marinade. If you’ve never spatchcock a chicken before , it’s very simple. Using kitchen scissors (or knife), place the whole bird on it’s breast (we sometimes say chest in the Caribbean) then using the scissors, remove the backbone off the chicken by cutting along each side of the middle main bone (see image below). Then turn over and gently press down on the breast to fatten the chicken. This method (spatchcock) will enable us to cook the chicken quicker and more evenly. Discard the back bone or save for soups and making stock.

Wash and pat the chicken dry, then in a bowl combine all the ingredients and give it a good mix.

Rub the entire chicken with this lovely Caribbean marinade and set in the fridge to marinate for a couple hours (cover with plastic wrap). Then place in a baking pan with a rack (if you don’t have a rack you can place on top some cut carrots, celery and onion) the idea is to allow heat to circulate around the chicken as it roasts. In my case I like adding about 1 cup of water to my pan as I find that it helps to keep the chicken moist as it roasts in the oven.

Heat your oven to 400 F and roast on the middle rack for about 50 minutes. Half way through roasting, turn your pan so it browns evenly. If you’re using my tip for adding water in the pan, you may need to add some more after about 30 minutes.

Allow the chicken to rest about 6-8 minutes (covered) before slicing through. I like placing the use lemon pieces in the roasting tray as it adds a lovely aroma as the chicken does it’s thing.

Without a doubt this will be one of the simplest roasted chickens you’ve ever made and quite honestly.. the tastiest. The marinade will add a lot of flavor to this chicken and I know your family and friends will be complimenting you on a job well done.

Succulent herb and lemon roasted chicken.

herb-roasted-chickenThough roasting is usually reserved for the oven, this one can also be prepared on the BBQ. Providing you know how to control the heat on your grill. I’m still to test it on the rotisserie gizmo I have for our grill, but I’m sure it’ll be just as delicious. I’ll probably get the neighbors peeping over the fence when the aroma hits them! Remember that old cereal commercial with the toucan..”follow your nose”? Toucan Sam was his name I think.

Warning! Speaking about “following your nose” be sure that your family is not at home while you cook this up. During the roasting time, the entire house will be filled with the amazing fragrance of herb, lemon and garlic. You’ll get tired of hearing “how much longer before we eat?”.

You’ll need…

1 Chicken (about 4 to 5 lbs)
1/4 tea spoon salt
1/4 teaspoon cracked black pepper
1/4 teaspoon paprika
1 bunch of fresh thyme (about 6 sprigs)
1/2 medium onion (cut in chunks)
3 cloves of garlic (slightly crushed)
1 teaspoon butter
1/4 cup water or chicken stock
1 lemon

Let’s start by preheating the oven to 450 F, while we prepare the chicken for roasting. Wash and pat the chicken dry with a paper towel. Then slightly crush the garlic (leave skin on if you wish), wash the thyme ( I got mine fresh from the garden, so I had to wash off the dirt), peel and cut the onion into 1/4 pieces and cut the lemon into quarters.

With the chicken “neck side” down – so you’re able to access the cavity, start by squeezing the lemon. Allow the juice to go into the cavity, then stuff with the garlic, onion, thyme and the lemon pieces that you just used the juice. The final step is to sprinkle the entire chicken with the salt, pepper and paprika. Then with your fingers, rub the butter on the breast and legs (basically the top side). Place the chicken in a roasting pan, with the breast side up so it’s resting on it’s back and place in the now hot oven. Add the water or chicken stock to the bottom of the pan to prevent any burning until the chicken starts to release it’s own oils and juices. Please keep the temp at 450 for about 20 minutes, then reduce to 375 and cook for another 1 hour and 10 minutes.

After cooking for the remaining hour and 10 minutes, you may find that it’s not as golden brown as you’d like. Feel free to turn on the broil setting in your oven and cook for another 5 minutes or so or until you achieve the golden colour you desire.

Note: During the entire cooking process I had the lid placed on my roasting pan. However when it came time for the broil setting, I did remove the lid. When your chicken is done roasting, do remove it from the oven and allow it to cool for about 10-15 minutes before you carve it. This will allow the meat to rest and prevent the meat from going dry.

When you “rest” the cooked chicken do have it covered so it remains warm and does not dry off as it’s exposed.
