Tasty Mushroom Olive Stewed Chicken.

Absolutely nothing beats classic Caribbean stewed chicken in my humble opinion. And with that in mind (not trying to deal with people saying I ruined a classic recipe), let me show you how to change things up a bit by adding mushrooms and olives to already classic way to enjoy island-style chicken. A little experimenting with other ingredients I enjoy and thus this recipe was born. Coincidentally my girls will not touch olives, so the entire pot is usually mine!

This past summer during our annual July Month Of Grilling, I shared this awesome recipe for what I believe is best way to roast a chicken on the grill. The self-basting achieved by having the chicken on a rotisserie, means you’d never have a dry and cardboard-like chicken. And your taste-buds will be excited by the punch the jerk marinade brings to the table. During the summer months I grow a lot of different varieties of extremely hot peppers, so I’m always looking for ways to put them to use. While I’ve never seen a recipe like this, the end results were just stunning. Based on the traditional way of making a basil pesto, however I’m putting a fiery Caribbean twist to things. With winter around the corner I thought I’d share a lovely soul warming comfort dish, packed with pure Caribbean goodness. While oxtails use to be ‘poor man’s’ food, the price today tells a different story. So if you can’t source or afford oxtails, you can certainly use turkey neck cut into pieces. Based on the typical brown-sugar stewing method we use in the Caribbean, these oxtail will be properly seasoned, falling off the bone and you’ll definitely be excited to serve this up.
