Ingredients
  

  • 6 chicken chicken legs
  • 4 garlic cloves crushed
  • 3/4 teaspoon dried thyme
  • 3/4 teaspoon dried rosemary
  • 3/4 teaspoon dried parsley
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon coriander seeds crushed
  • 3/4 teaspoon red pepper flakes optional
  • 2 tablespoons olive oil
  • 1 teaspoon salt

Method
 

  1. Preheat oven to 400 °F (200 °C). Line a baking tray with parchment paper.
  2. In a bowl, combine garlic, herbs, spices, olive oil, and salt into a paste.

  3. Rub the mixture thoroughly under and over the skin of each leg quarter.

  4. Arrange leg quarters skin-up on the tray, leaving space between each piece.
  5. Bake for 1 hour 10 minutes, or until skin is crisp and internal temperature reaches 165 °F (74 °C).

  6. Let rest for 5 minutes before serving.
