Stewed Oxtail With Butter Beans.

Oxtail was one of those things which was never cooked in our home while growing up (I don’t ever recall my mom cooking this back then), so it’s not something I learned to cook from the main culinary influences in my life… mom, dad, aunt and grandmothers. But the immigrant life is one in which you tend to associate with people who are similar to you and can relate to your struggles, so my friends were from other Caribbean islands. Partially living in each others homes, saw us not only learn about the food from each island, but we all grew a new appreciation for the diverseness of the Caribbean in general. Though the basic foundation to Caribbean food is the same, the end product and methods of preparation can differ.

This recipe for cooking oxtail with butter beans is one I picked up from a restaurant owner (had to beg d man to share) where I would go get my weekly fill of Caribbean food which I didn’t have to cook. I’m sure he didn’t tell me his secrets, but I did add a few things to give it my personal touch. You’ll Need…

2lbs of oxtail (ask your butcher to cut it into 1 inch pieces)
1 tin of butter beans (lima)
5 cups of water
1 onion
2 tomatoes
2 scallion (green onions)
1/2 a scotch bonnet pepper (I used a whole one)
2 carrots
3 cloves of garlic
4 sprigs of fresh thyme
2 tablespoon chopped parsley
1/4 teaspoon of allspice
1/2 tablespoon of salt
1/4 teaspoon of black pepper
2-3 tablespoons vegetable oil

* You’ll need about 3 tablespoons of lime or lemon juice to wash the oxtail pieces with (use vinegar as well).

Place the cut pieces of oxtail in a bowl and pour the lime juice over it, give it a good stir and pour in some water. Wash each piece off, then drain. Rinse with cool water and pat dry. Now in a fairly large pan, heat the vegetable oil on high and brown the pieces of oxtail. Try not to crowd the pan or it will not brown properly and it will release a tons of liquid. I did mine in two batches.

While this was browning (takes about 15 minutes) I prepared the other ingredients (wash, peeled and chopped)

With the pieces of oxtail all browned, you may need an extra tablespoon of vegetable oil in the pan (not mentioned in the ingredients list above).. add the diced onion and garlic. Let that cook on medium heat for a few minutes. Then add back the pieces of oxtail and top with the herbs and vegetables.

Give that good stir, then add the salt, black pepper and allspice. Now top with the 5 cups of water (enough water to cover everything) and bring to a boil. When it starts boiling, reduce to as low as you can and have it at a gentle simmer. Cover the pot and let that simmer (braise) for about 2 hrs or until the meat is tender. We’d like to have the meat fall off the bones. Depending on the age of the oxtail it may take a bit longer for you. If you have a pressure cooker, this will save you a ton of cooking time. NOTE: If you’re using dried butter beans, now would be the time to put them in as well, so they too get tender.

Rinse the can of beans to remove the salty brine-like solution its packed in and add it to the pot. Cover and let cook for another 20 minutes.. until the beans are infused with the flaovours of the stewed oxtails and so that the gravy thickens up a bit. Be gently when handling the beans as they are very tender and can fall apart very easily. NOTE: I cheated a bit and added a 1/4 teaspoon of Caribbean style browning. But this is totally optional.. I wanted a nice caramel colour to my finished dish.

This is one of those dishes where you must have patience to allow it to slowly cook and do it’s thing.. to get tender. Besides this method or using a pressure cooker, I’m sure you can also add everything to a slow cooker (after you’ve browned the ox tail pieces) and let it cook slowly all day while you relax. This pot was enough to serve about 5 people with a side of rice and peas and a nice fresh green salad.

    I really loved this recipe because it’s my dad’s favorite dish in the world. I made it exactly how you made it and he almost cried. He hasn’t had authentic Jamaican food some he was a teenager. I was just thrilled that I could prepare something that could take him back.

    I would usually brown my oxtail – similar to when stewing chicken. It infuses the flavor even more. Just to let you know Chris I have tried a lot of your recipes and they have all been great.

    Chris I made this oxtail stew last night.

    I used 2 table spoon dark soy sauce, 1 of Worcestershire, 2 pimentos, fresh basil and fresh podina, 1 can diced tomatoes, every thing else as you did, came out great.

I see celery in your picture during the cooking of the oxtails; however, I don't see it as in the needed ingredients. Please help.

    Chris, this was a "likkle" taste of home. I served it with roasted breadfruit in addition to the rice and had the family licking their fingers. Now we have to lobby for a reduction in the price of oxtails, for I can't believe the price. Maybe someone will gift-wrap some for me for Christmas! LOL!

    Hi Chris I just want to say thanks for your recipes. I am alergic to meat of all kinds, I could only eat seafoods but now that i have the recipes I can cook the perfect meals for my family ,because the measurements are there which give me no reason to taste which could cause prolems for me.

    I cooked the perfect oxtail with white beans because i did not have the butter beansI got so much praise for it . my niece even wants me to shoe her how to cook it, I told her where I got the recipe and gave her your website. I am happy everyone enjoyed it.

    Hi Chris,
    I'm a "Trini" and when it comes to cooking it's all about seasoning our meats. I was surprised that you missed this step. The seasoning not only marinates the meat but it's more tasty and flavorful. Try adding some coconut cream about 5-10 mins before it's done and you'll be amazed as well.

    I love Broad Beans! They are my go to Beans. I love them tossed with lime juice, olive oil, tomatoes & broccoli!! Yummy. Or a Broad Bean Ital Stew with Coconut Milk, or as a dip with pita chips. Or Curried, gosh I could go on & on. They are a vegan's best friend!!

    I'm a vegetarian peoples, I therefore can't comment on this recipe cos I don't eat animals. As there's so many lovely, veggie recipes instead on this website, why not give them a go instead? A good one to try is Eggplant with potatoes. Yummy!

    I made oxtail over the weekend but without the butter beans. I used a few of cloves instead of the allspice. Talk about yummy. It went nicely with the red beans and rice.

    I must say I'm not the greatest of cooks period, but your recipes have them coming back for thirds & fourths…what makes this so very good is that I'm American from American ancestry and my husband is caribbean born having moved here as an adult.     I too am a vegetarian. BUT…I adore spicy, hot, pungent, complex whatevers. Been adapting your meat recipes as well as lovin' your veggie ones.. Super easy. Also, I may be moving out of NYC to where some of the ingredients aren't as available….so….I appreciate the shopping links.

    In that strange, coincidental way of things, this is similar to the traditional Mexican, and handed down colonial American recipes for oxtails that I learned growing up. Give or take a chili pepper/spice or two. 🙂 I suppose the world over, people know what tastes GOOOOD! Thanks for adding this wonderful variation to my personal cookbook!

    This is a great site. As a Trini by birth who moved to the US at 13 and now in UK in my 30's, I have not been as fortunate to enjoy many lovely Trini dishes, since leaving both Trinidad and my mother's home. I am now fortunate to be in London, where recently I discovered many of the markets and stores throughout London (south london) has the majority of the ingredients above.

    The receipies and instructions are simple and easy to understand. So can't wait to cook this dish. I am looking forward to cooking calalloo and mastering baking bread and sweat bread.

    Also, as my mother is getting older and not able to move around as quick as she use to, it is great to make some dishes that she enjoys. Everyone should remember by us taking care of our love ones we show the younger generation to respect, love and take care of us when we aren't as mobile.

    Chis, all the steps are correct according to my dad but he would add some green seasoning to the oxtail while it is browning and a few sliced leaves of shado beni (cilantro) for extra flavor and you'll be licking your fingers when it's finished

    I love oxtail!! I never had this growing up and was one of the first dishes I was served after meeting my husband's family. Growing up my mother had always taught me to try foods before saying I don't like them. I have to admit when I was told I was about to try oxtail … anyway … I am glad I did because it is a dish I enjoy very much.

    There is nothing like a good oxtail stew or soup! In my family we season and let soak over night, then brown the oxtail in burnt sugar and pressure cook in the same pot with potatoes, carrots, tomatoes, bell peppers and even ochroes. Just whatever is available. Yummm!!! This way also seems pretty tasty as well

    I love my oxtail. Sunday dinner with rice n peas. The thing I do is season my oxtail on a Friday and let it marinate untill Sunday and then I would follow your recipe. Beleive you me it is the bomb. My family jus love it. Thanks for the other great recipes.

    I am also a lover of oxtail. What I usually do is pressure cook mine to cut down the cooking time then season well and let sit for 2-3 hours or better yet overnight – this way all the yummy seasonings get infused. When I am ready to cook I use some more fresh seasonings. Lima beans are my favourite as well and can also use black-eyed peas or kidney beans. Your recipe is similar to mine and as usual very mouth-watering. I enjoy all your recipes and thank you for sharing them all with us.

    Great oxtail recipe. Whenever I cook oxtail, I reach for the pressure cooker. Yes! back home in Woodbrook, in Arima, in LaBrea and in the Valley…, we do season the oxtail and let it stand for awhile before cooking. Thanks for being great in the kitchen.

They are step by step, very simple to follow and the pictures, add a realness, and for me, the pictures serve as a guide, for instance, if trying one of your recipes, I might wonder, should this be like looking like that, then a look at the pics, shows me, how it should look.

    this looks so delicious. i don't eat meat anymore (only fish) but i remember my gran used to cook mouth-watering ox-tails and stringbeans. they were so good. the house used to smell like curry and accent and i knew she was cooking some comfort food. thanks for bringing back memories of carefree days.

    THAT OXTAIL RECIPE,LOOKS VERY INVITING.I'M FROM THE BAHAMAS,BUT MY STEPMOTHER WAS FROM JAMAICA.SHE WAS OF INDIAN HERITAGE.SHE WOULD PREPARE OXTAIL DISHES,AT LEAST ONCE A WEEK.SOMETIMES,SHE WOULD PREPARE AS A STEW PEAS DISH,WITH A LITTLE HAM SKIN,STEW BEEF & SPINNERS(SMALL ROLLED TORPEDO SHAPED DOUGH).
    I SIMPLY LOVE OXTAIL,ANY WAY IT IS PREPARED,WITH RICE & PEAS,SOUPS OR WITH THE BUTTER BEAN.JUST TALKING ABOUT IT,HAS MY MOUTH RUNNING WATER.

    Cooked this the other night, took 3 hours. Wondered about adding some carrots but didn't know if that was a traditional thing or not so I didn't. After seeing your picture of oxtail though, I will definitely add them next time! Yummmy.

    Well Chris, I have not tried the Ox Tail yet! Good luck finding them, at least here in Nanaimo! However when I do, I will certainly give that recipe a go!

    The recipe is close to how I cook Oxtail. I do season the oxtails before I brown them in the oil. And I always use a little browning, like GravyMaster or whatever is available, to give it a carmel color & some flavor, even in my stewed beef & stewed chicken. Learned that from my Trinidian friend’s mother & aunts.

    Love the pictures in the step by step process.

    As a Trini, I know we season everything, so how come u didnt season the oxtail before u cook it? I do like the addition of the vegetables, makes it a very healthy dish..But i will season my oxtail as i usually do, before trying it..

    It was because this recipe & all your other awesome recipes Chris that I have learnt how to cook Caribbean dishes for the first time. I married a Caribbean man a few months ago & wanted to be able to make him feel comfortable & not stray to far from his homeland & his mom's cooking.     Based on your recipe here u didnt season the oxtail before browning it. Does that mean the actual meat will not be properly seasoned, although the actual 'gravy' is seasoned? >>> fyi thts a comment.I'm awaiting my cookbook 🙂
