Spreading the culture of the islands.


Friends, I do apologize for this not being a recipe post, but I  hope you can spare me a few minutes of your time to help share some of the culture of the islands with you and the thousands of visitors that come here daily. BTW, thanks for your continued support.  I promise to have a new recipe ready within the next 48 hours (maybe this time I’ll do some baking). As you all know (if you’ve been part of the Facebook Group we were unable to be in Trinidad and Tobago this year for carnival and it was very stressful knowing what we were missing. If you’ve ever had the opportunity to be part of Carnival, you’d know what I mean. And for those of you who’ve not had the pleasure yet, make it one of those things you MUST do in this lifetime.The people, culture, food, music and overall “let loose” fun is truly something to experience, at least once.

If you’d like a little taste of the festivities and live in Canada, you’re in luck. I’m helping  in the distribution of the official “Tribe 2010 Carnival Magazine” but I have limited supplies so you must take action today!

About the magazine.

Basically the magazine is produced to showcase the efforts of one of the most popular bands in Trinidad and Tobago carnival, Tribe. It covers all the events they’re associated with, in pictures. The 115 plus pages are packed with hundreds of top quality pictures and is well put together in high quality paper that feels more like a book than an actual magazine. From all the fetes leading up to the big days as well as Jouvert and carnival Monday and Tuesday, you’ll be blown away by the rich colours of the costumes and the sexy nature of the people in the costumes. This is truly a collectors item and would make a great conversation piece on your coffee table or to just show friends and family a bit about the rich cultural heritage of the islands and the wonderful job the people at Tribe does on a yearly basis.

Personally I’ve been collecting these magazines ever since the first edition was published and I now have friends asking me if I got the latest issue when they know it’s carnival time. It just so happens that in the 2009 issue my wife and sisters were included in the magazine, so if you played mas with Tribe in 2010, who knows.. you could see yourself in this years issue.

Cost | Reservations.

As I mentioned above I have limited copies for distribution, so if you’re interested in getting a copy you must contact me quickly (I think I have about 25 copies left). The cost is $20 Canadian and that includes shipping within Canada. Once you contact me I’ll reserve a copy for you and discuss payment arrangements. Local pick-up is also available (so you don’t pay the shipping cost).

I really wish I could show you some of the pictures and the quality of the magazine itself, so you’ll know why I didn’t hesitate in making this recommendation.

    Hi Chris,

    Cakes crack because of too much heat. Instead of baking at the normal temperature of 350 degrees, try 325 instead. Also, a good thing to have in your oven is a temperature gage. This will let you know if your oven is giving you the correct heat/temperature.

    Your recipes are the bomb. There is nothing more rewarding than the smell and taste of Caribbean food. It warms the heart and soul. When I lived in Miami I tasted some rice and peas that seemed
    to have some tomatoes or tomato sauce in them. I know for sure they were made with Congo
    peas. They were different compared to what I was used to eating, but they were quite good.
    Any ideas?

    Congrats on aking it to 1000 members on your Facebook fanpage. I use the Naparima Girl's cookbook whe I cook, but whenever I a lost I look up the recipie on this site; what I love about your recipies is the pictures that you include. I am always like "Oh that is how it's suppose to look!".
    Would you be making a cow heel soup anytime? I am really interested in learning that one.

    Hey Chris, it's me Chris… Thanks for the info on finding a pan to make Roti. I forward your emails to all my friends and tell them to sign up to get them for themselves. You make it so easy to cook all these great meals. I consider myself a decent cook but I still double check w/ ur receipes to make sure I 'GOT IT RIGHT"… Thanks and please keep them recipes coming!

    I truly enjoy your recipes,and just like you and your daughter I love to smell local seasoned chicken for stew before it is cooked.My Mom used to be a great cook. Keep up the good job your are doing. I think men who can good is great. I would love to win a magazine.

    Wonderful website. Keep up the great work with the step by step recipes. I am a Trinidadian missing all this great food. At least this is a site that my sons could go to if they want to sample "mom's" cooking in their own homes.
    Some baking is a good idea so I am looking forward to the next post.

    My wife is a Trini (and a Bishops' girl!) so I usually take your recipes back to her and ask about them. She thinks it's pretty funny, but I get some yummy food out of the deal.

    My husband is from Dominica and I am from El Salvador so I really try to cook with both cultures so it’s great receiving your e-mails. The first recipe I tried was the oxtail stew and I always thought that it would be difficult to make but with your recipes showing step by step pictures it was so easy. My husband was sooooo impressed!!!! Since then I have made it a few times and it”s always a hit. I truly enjoy your recipes and I’m happy that my husband can have a little bit of home away from home. Thanks!

    I have tried a few of your recipes, and I enjoy receiving your maill
    because I can;t use too highly seasoned meats,but the ones I tried are quite goog as well as the desserts and son. They are excellent Caribbean recipes.

    Hi,
    Luv the roasted pork recipe took two tries to get it right but loved it. I have no problems helping spread the Trini culture. i ave friends at work that I introduced to roti and doubles. Hey, Does anyone know where to buy “doubles’ in Hamilton. I tend to go to Toronto to get it. Thanks

    When I emigrated to the USA from Trinidad 20+ years ago, I thought missing Carnival would be the hardest thing about living here. Then I went through my first winter, and I changed my tune real fast! As time has gone by, what I’ve missed most has been the food. Your site and the recipes you share makes me feel that much closer to Trinidad. Thanks for your the great recipes and your passion for Caribbean cooking.

    Ron i must say that u are doing a fantastic job of providing eveyone on your website with super and mouth watering receipes. I must say i am unable to partake of anyof these receipes because of health reasons. Nevertheless i am a Trinidadian like yourself and we are always experiementing with all kinds of dishes and come to the ultimate taste of tastes.     Chris I love your presentations.I encouraged my children to subscribe to Caribbean pot. It will save many phone calls to mom asking how to prepare many caribben dishes that they like and want to prepare now that they are on their own. The accompanying videos are very realistic.

    I love this site!!! Great recipes, good information – a great read!! My husband and I honeymooned in Negril and we were addicted to the jerk chicken and the grouper!!! We have wonderful memories of that gorgeous place.

    This would be so cool! I lived in Trinidad on my boat for 2 years. Their Carnival is the best party I have ever been to! Boy do I miss the Caribbean! Thank you “Caribbean Pot” for bringing it back to me.
