Spinach Cooked With Salted Cod Bits.


 

 

Call me crazy, but even as a kid I loved spinach (bhaji) in all forms and to this day I still can’t figure out why ALL kids don’t love the stuff. Over the years (out of convenience and availability) spinach took the place of my beloved dasheen bush leaves and what some people call Jamaican Callaloo (we call chorai) can always be found in our vegetable garden during the summer months. Cooked with or without coconut milk, spiced up with hot peppers and enhanced with leftover stewed meats, spinach is something I can have on the regular.

Here’s a quick and tasty way to serve/enjoy spinach with a Caribbean twist.

 

You’ll Need…

1lb Baby spinach
3 cloves garlic
1 tomato
1/4 teaspoon black pepper
1 sprig thyme
1 scallion
1 medium onion
1/2 cup salted cod bits
2 tablespoon vegetable oil
1/4 scotch bonnet pepper
1 scallion (green or spring onion)

Note: You can make this dish fully vegetarian by leaving out the bits of salted cod. But be sure to add salt and for more flavor, add a 1/2 cup of coconut milk during the cooking process.

Though the package said the spinach was washed, I still like washing it as there have been times when I did find some sand between the leaves. Try your best to get baby spinach as it’s much more tender and not as ‘bitter” as mature (dark green) leaves. After washing, set in a colander to dry. Take a closer look and remove all wilted (discolored) leaves from the bunch as well.

Chop the garlic, onion, scallion, thyme and scotch bonnet pepper… remember to not include any seeds from the scotch bonnet pepper as that’s where the majority of heat dwell. Additionally, be sure to wear gloves if your hands are sensitive and be sure to wash your hands with soap and water.

Make little bundles with the spinach leaves and cut into shreds about 1/4 inch thick.

Prepare the salted cod (I used boneless for easier work). All you have to do is place the salted cod in a pot with water, bring to a boil and allow to simmer for 20 minutes. Then discard the water, rinse with new water and allow to cool. Then shred into bits. here’s a video showing how it’s done…

Heat a saucepan on low heat, add the vegetable oil… then the salted cod bits (you can use any dried salted fish). Allow this to cook for about 5 minutes.. it will start to go brown on the edges and stick to the bottom of the pan. Scrape and move around. The idea is to build a base of flavor for the spinach. Next up we’ll add the sliced onion, scallion, thyme, scotch bonnet pepper and garlic. Make sure the heat is on low, as we want these items to sweat down and further infuse the dish with flavor. The last thing we want is burnt garlic and onions.

After 4-5 minutes, turn up the heat to medium, add the black pepper and the chopped spinach to the pot. It will pile up, but as soon as the heat gets going it will wilt down.

As it cooks, it will sprout a lot of it’s own liquid and go from that brilliant green colour to a more darker shade. Place the lid on the pot, turn the heat down to low and simmer for 20 minutes.

After 20 minutes remove the lid (remember to stir every 5 minutes as it cooks), turn up the heat to burn off any excess liquid which may still be there and add the chopped tomato to give it some colour. taste for salt. Note that we didn’t put any salt in the dish as in most cases the residual salt from the salted cod bits will be enough to season the entire dish. But since your tolerance for salt is different that mine.. check and adjust accordingly.

If you’ve never used salted cod (salt fish) you’ll probably think this is a bit weird, but I assure you that the flavor will be amazing. My favourite way of having this (other than with flour /cassava dumplings) is with sada roti. Remember you can make this a full vegetarian dish as long as you follow the tip I left in the “Note” above.

Being African American living in Canada (Toronto) I became familiar with Caribbean cooking and love Curry Goat Rice and Peas (black eyed peas).     I've tried other recipes on other sites, but i must say all that i have tried on your site, sweet bread, sada roti, jerk chicken, accra, curry mango, to name a few, have all been successful. this weekend is my son's 14th birthday and we plan to have a bar-b-que- we serving pork. I'm going to try your coconut ice cream, I'm tired of buying ice cream that does not taste like as my son says "long time". I'll let you know how it comes out.

    We've been experimenting with fish on the grill, was very pleased with the Salmon. We plan to go to our local fish farm and catch trout for the grill too. Hey this guy is a Chef INstructor what could he possibly need with it…WELL, I kind of head up a club here at school on Island cooking and would love the book so the students could do the recipes and I could teach about the ingredients. You also see I have really gotten in to cooking in all of the islands because of you. Rcently I was asked to be the celbrity chef at the Aruban Food and Wine Fetiva. Not so much island cooking because they wanted Fine French with the sponsor MOET Chandon and Dom Perignon. But the influences of the islands is what I find facinating and would love even if I lose – could I buy one from you because I think this would be really cool for my student to cook and learn while they are doing it.     I like to grill everything but my new favorite is pineapple. I just slice it into rings and after I've finished cooking steak, burgers, pork chops, etc., I put them on and grill for ~5min per side. Delicious!!

    I love to get a nice free run pork shoulder and get the butcher to slice it up. A little seasoning and some homemade BBQ sauce then straight to the grill. Just melts in mi mouth.

    I love to grill chicken, fish, shrimp, lamb, burgers, franks, veges. I'm not a pork eater and my husband is not a beef eater, (religious reasons) I choose to grill for health reasons especially for my husband who suffered a stroke because of high cholesterol so I'm always looking for recipes to do grilling.     Hi my man Chris! I'm 63yrs old gmom and wanna say I love your site and you as a person! You have such a sweet spirit and love how you KEEP IT REAL! ya mon!     I just love salted cod fish, its so easy to prepare especially with spinach, it is also lovely with rice, dumplings salad, with ochoe, these are just a few dishes I have it with, everytime I am preparing a salf fish dish it reminds me so much of my grandmother, God rest her soul.

    My favourite item to grill along with my meats (of course) is pineapple.
    I grill for a few minutes just for colour and then toss in a pan with dark rum….
    It goes well with a scope of vanilla/coconut ice cream!!!

    My favorite thing to grill is Baby Back Ribs. Add a dry rub and refrigerate overnight (or at least 8 hours) then in the oven at 300 degrees for 3-4 hours and then onto the grill it goes….fall off the bone tender and finger licking good!

    Your website is fab, with all the pictures and clear cut simple instructions for recipes. As for grilling, I like Chicken thighs marinated in a tangy home made sauce, and breaded shrimp or scampi, sometimes breaded chicken breast pieces, enjoyed with hot chilli sauce and a cold beer.

    My favourite thing to grill? Oh my… . anything that isn't too small and will fall through the grill! But seriously, I love cooking whole chickens, pork, lamb or beef roasts on the rotisserie; something about the sound of that motor turning for ages while we sit outside with a cold beverage knowing that the dinner is basting itself, then throwing on some corn on the cob (has to be local and fresh!) and a foil packet of potatoes, onions, okra, etc as the meat nears cooking nirvana! Now I'm hungry, off to the store for a nice boneless leg of lamb:) It's 32 degrees out here right now in Edmonton, so I certainly don't want to be using the oven!!!

    my favourite thing to grill is pineapple and mango. I love pineapple and mangoes. slowly grilled the sugars is released and the fruit is carmelized and bai it's as sweet as pie. I grill these fruits and gave it to my friend and she thought I was stark crazy until she tasted it…now its her favourite thing to grill. |I've added these fruits rough chopped to the top of your coleslaw and bam…it was amazing. I also used the grill fruit to make your spicy pineapple salad inspired by mangoes…wow also amazing. but mostly I just top it with some peach yogurt and i'm good to go with a nice light dessert.

    chris a friend turned me on to your site an thank the lord she did, i love to cook an i'm have,n a small outside party in 2 weeks any suggestions on sum,pin in an hr on the grill or oven,or stove top with that jama'k,n flare an flavor??? i always try to fix things the day before an that helps me as i stay so busy,,,shrimp,beef, cik,n,,not too much pork with( high blood pressure ) so any of that an veggies or summer salad would help,,,,need sum,new marinades that jump with flare an not too tangy or hot,,,oh what do i need to set up jama'k'n spice rack ???? thank you for being here,have tried several things an love it all so far,,have a great day,,mary daniels
