Invigorating Tropical Starfruit Juice.

Starfruit, also known as carambola or five fingers, offers numerous health benefits, including boosting immunity, promoting heart health, and aiding digestion. Its high fiber and antioxidant content make it a great source of vitamin C.

3 large starfruit (about 2 lbs)
2/3 cup sugar (adjust)
2 lemons (juice)
6-8 cups water
1 tablespoon orange extract

Notes: Additional ingredients you may use for subtle flavor enhancements are almond extract (1 teaspoon), mixed essence (1 teaspoon), and a few drops of Angourtara Bitters. I used granulated sugar as the sweetener, but you may use anything you prefer.

Wash the starfruits and give them a rough cop, then place them along with the water in a blender and puree. I used 7 cups of water, but for a more concentrated flavor, use 6. Add another cup to thin it out a bit if you wish.

It will only take a minute or two on high speed.

Strain and discard the pulp.

Add the lemon juice (freshly squeezed) and the other ingredients.

Chill or serve with ice if you used 6 cups of water; the ice will dilute the mixture. Add more sugar if you wish.

Garnish the glasses with slices of starfruit and mint (if you have).
