There are days I look back at my early years in Canada, and due to circumstances, I had to eat and enjoy things that were not only foreign to me but weren’t the most appealing. Such is the case of the humble can of Spam.
You’ll Need…
1/2 teaspoon veg oil
1 can Spam (sliced)
1 med onion (sliced)
1/2 teaspoon black pepper
1/2 teaspoon Italian Seasoning
2 scallions (chopped)
6-10 cherry tomatoes (sliced)

Heat the oil in a heavy pan on medium heat and fry the Spam slices (about 1 cm thick) for 5-7 minutes. Be sure to flip them to brown on both sides.
The spam will firm up, and the slight golden edges give it a unique flavor.
Set them aside. Turn the heat down to med/low and add the onion, black pepper, and Italian seasoning (herbs). Cook for 3-4 minutes.
Now add the scallions and tomatoes.
Cook for 3 minutes before adding the pre-fried pieces of Spam.
Should you want to add crushed garlic and a teaspoon of tomato paste, those will enhance the overall dish.
Heat the Spam (about 2-3 minutes) and then you can shut off the stove. Enjoy!
Serve with eggs and toast.
