Here’s a tea my siblings and I grew up enjoying, especially during flu season. “Bush” tea is something that was quite common in the small village of Guaracara, where I grew up, in Trinidad. Orange Peel, Lime Bud, Soup Sop Leaf, and others were something we’d have along with Milo, Ovaltine, and hot Cocoa Tea every morning.
You’ll Need…
3 branches of Lemongrass
4 slices ginger
8-10 cups water
honey or sugar (optional)
1/2 lemon (optional)

Give the lemongrass (we say fevergrass in the Caribbean) a wash; then, you can chop it into pieces or tie them in a circle (to fit in my pot) as I did.
Wash the ginger or scrape off the skin.
Top with the water and bring to a boil.
Simmer for 5 minutes, then turn off the stove. Allow this liquid to steep for 3-4 minutes, then strain and enjoy.
You may sweeten with sugar, honey, or any sweetener you enjoy and in the amounts you like.
