Easiest TASTY Jerk Pork.


Look no further if you’re looking for the easiest yet tasty Jerk Pork done in your oven. Should you choose to grill the pork outdoors, that works, and if you own an air fryer, you can easily adapt the recipe for that device as well.

4-5 lbs pork
1 cup Jamaican Jerk Marinade
2 scallions (chopped)
1 1/2 cups pineapple (cubed)
1 tablespoon brown sugar (or honey)
1/2 medium onion (diced)
2 clementines (juice)
5 sprigs thyme

Notes! Please follow along with the video below, as much more about the recipe is discussed there. Especially which cut of pork to use for best results and why I used a spicy Jamaican jerk marinade. Orange juice is an excellent replacement for the clementines. I used a store-bought Jamaican Jerk marinade for convenience.

Create an enhanced marinade with everything except the pork and thyme.

You’ll notice two things about the pork I used. It had fat and skin, and they were about 1 1/2 inches thick. Place the pork pieces (cleaned) into a zipper bag or bowl and pour the marinade over them. Marinate overnight for best results or at least 3 hours.

Preheat your oven to 380 F. Line your baking tray with foil, and be sure to use a rack to keep the pork from sitting in the marinade/liquid as they roast (explained in the video).

I failed to line my baking tray, so I had a mess to clean after. Pour the remaining marinade directly over the pork, toss the thyme sprigs on, and cover with foil. Roast for 2 to 2.5 hours on the middle rack.

After one hour, you can flip the pork pieces and baste them with the liquid at the bottom of the roasting pan. Baste a few times so they don’t dry out. Should you need to add liquid at the bottom of the pan during the roasting, water or apple juice will work.

After 2.5 hours, I removed the foil and roasted it for a further 25 minutes uncovered. This is when you’ll get that lovely golden color, but be mindful that the sugars in the marinade will want to burn.

The fat will render, and the pork (including the skin) will be tender and juicy. The drippings at the bottom of the pan will be an excellent gravy or sauce to serve the jerk pork with. Or you can use my Ultimate Guide to Making Jamaican Jerk Sauce at Home for an incredible Jerk Sauce.
