Cheese Paste Sandwich Spread.

If you’re from the Caribbean and you’ve never had a cheese paste sandwich for lunch, your mommy didn’t love you. I’m just joking, but just about everyone I speak with about having cheese paste sandwiches, they can all relate.. no matter which island they’re from. Back in the day I recall people also adding a drop or two of food coloring to this wonderful cheesy spread to enhance the look of the finished sandwich. Green, pink, yellow and in some cases, blue.. do you remember?

Cheese paste is just a spiced up cheese spread that’s ideal on sliced bread and crackers.


You’ll Need…

3 cups grated cheese (old cheddar)
2 tablespoons grated carrots
1 tablespoon mayo
1 tablespoon butter (soft)
pinch black pepper
1/2 small onion grated
1 tablespoon prepared mustard.
dash peppersauce (hot sauce)

Notes:  If it’s not getting smooth, add a tablespoon or 2 of milk as you whisk. To make the cheese easier to grate, place it in the freezer for about 10 minutes before grating to firm up a bit. You can certainly use a mixture of different cheeses if you like. I used what we had in the fridge. You can also add additional flavor by adding in some finely diced pimento peppers (aka seasoning pepper) to the mix.

Grate the cheese as fine as you can so the overall texture will be very creamy. Then place all the ingredients in a large bowl and give it a good mix as to incorporate all the flavors and give the cheese paste a lovely creamy finish.

This has got to be one of the simplest recipes I’ve shared to date and quite honestly.. one of my faves! There will be enough here for about 6-8 sandwiches (depending on how thick you spread it on) and if you don’t use it all the first time, it can store in the fridge for a couple days. Be sure it’s covered with plastic wrap or in an airtight container.

    good memories…cheese paste but I never had it with carrots… Im allergic to raw carrots so cant do that.

    Such memories. My mummy only used “Trini” cheese for this. No carrots though. I’m going to make some for my American husband. He loves Trini cheese.

    Thanks for sharing Chris. I remember my mom making these sandwiches for me to take for my school trips etc. I still love the taste of them. I made them for my kid when she was smaller, and even now as adult she’s still asking me to make these sandwiches for her.

    I’m from Guyana and lived in Barbados for sometime, this is exactly how my mom made this but I wonder, would this last in the fridge?

    I would like to take this to school for a little snack daily but I don’t want to go through mixing the paste all the time I need a sandwich so …if I mixed and popped in the fridge, how much life you think I have on it before it goes bad?

      I’m sure you can.. I don’t see that being a problem. As long as it’s not overly dry (when the moisture is removed from having been grated too long)

    I always grate a little garlic, just about half a clove, cause u dont want the garlic to overpower it. A little bit just gives a different something, a little hmm(?) that makes it more yummy.

    My mum makes the best cheesepaste! When she has to make a lot, she does it in the food processor. It's unbelievably smooth and fluffy, with the same amazing taste. Oh, and yes, pimentos add a delicious depth of flavour!

    I love these sandwiches and I always made it but something about this recipe caught me off-guard – Never knew that grated carrots is added to it. I see how the color is accentuated. This I am definitely going to add from now on. I love added pimento pepper. Taste great and like Abemjo, the ribbon ones looks so great at weddings.

    love cheese paste sandwiches. You could use three layers with different colours and cut it in three strips (ribbon sandwiches) or you can make cartwheel sandwiches as well if you want to make them for parties.
