The Ultimate Pepper Sauce Recipe.

With the abundance of hot peppers I had in my garden this summer, you may have noticed that there are several recipes recently dedicated to the most classic of Caribbean condiments… pepper sauce (hot sauce). If you look at the very bottom of this post, there should be some links to some of the spicy sauces I’ve shared recently that I encourage you to try. As I’ve pointed out in the past, just about everyone on the islands swears that their pepper sauce is the best! Be it the heat, uniqueness of the ingredients used or overall flavor. Here’s one that follows most of the common principles of making a good pepper sauce, with a few personal ingredients I like to add. Be warned that this is very HOT!

You’ll Need…

15-20 hot peppers (scotch bonnet or habanero)
1 teaspoon salt
1 1/2 cups vinegar
10 leaves of Shado Beni or 1 cup cilantro
6 cloves of garlic
1/4 small green papaya
1 small bitter melon (caraili)
1 lemon or 2 ripe limes
Juice of 4 limes
8 pimento peppers – optional
1 carrot – optional (helps to balance heat from peppers)

Some notes:

a. u include the seeds of the pepper for added heat
b. add more vinegar if you like it less thick.
c. remember to remove the seeds from the lemon after cubing.

I start off by rough chopping the shado beni, papaya and bitter melon to make it easier to puree in the food processor (remember to peel and remove the seeds from the papaya as well as the bitter melon – you don’t have to peel the bitter melon). I remove the skin off the garlic as well to have it prepped.

I then slice and cube the lemon and remove any seeds that I see.

I highly suggest you wear gloves for the next few steps, as the peppers can cause some pain if you handle them with your bare hands. I then remove the stems off the peppers and give them a rough chop. I retain all the seeds, but if want a milder sauce, do remove the seeds.

Now that I have everything prepped, it’s time to bring out the vintage (old) blender and put it to use. Basically all you’re doing is adding everything listed in the ingredients list to the blender or food processor and puree it until it’s a smooth consistency.You may need to add more vinegar as I pointed out above.

IMPORTANT : the amount of ingredients you’re seeing in the pictures above is not what I mentioned in the ingredient list. I’m making a bigger batch, but follow along with the ingredients I listed and you’ll be set. You’ll also notice that due to the big batch I’m making that I have a lot of bottles of finished sauce. You’ll have enough for one bottle when done.

Pour into a clean, dry bottle and store. It should be fine outside the fridge since we used vinegar, but you can certainly keep it in the fridge so it will last longer. Bear in mind that by placing it in the fridge, it will loose some of it’s heat. This is the batch I got when I was done. I have some lucky friends who’ll have their hands on the Ultimate Pepper Sauce when I see them next.

    Chris I love getting your emails and recipes.
    My HOT Pepper sauce recipe is called “Hot No Ras P.S.” includes Habanos/Scotch Bonnet.
    equal amounts of salt and sugar, Culantro, Mustard and vinegar, and a few Ghost peppers.
    Blend in an old blender, then boil in a dutchie pot so the seeds get soft and the heat and flavor comes ou, then blend once more.
    You should try this method of boiling the sauce once blended. All the other stuff takes the heat away from the P.S.

    Hi. Just made this and it was horrible. Don’t know where I went wrong.

    I put the entire bitter lemon in (minus seeds). I used rice wine vinegar. I put a lemon in plus skin

    Any ideas??

    My local caribbean takeaway has stopped making homemade pepper sauce so im desperate to recreate it properly

    Morning Chris, I have your cookbooks and use your recipes all the time. I want to try this ultimate pepper sauce, but am in Texas. Have never seen a bitter melon. Anything to substitute for it? Also, while we do get papaya’s they are not small green ones. Anything to substitute for that?

    Hi,

    I’ve just made this and it looks & tastes great. Sweet, sharp, tangy and hot.

    I couldn’t get fresh Pimenton peppers, but found pickled ones, which works well seeing as vinegar goes in to the recipe anyway. Anyone in the UK – look out for Aleyna Cherry Peppers in Tesco.

    You’ll need to go to an Indian greengrocer for bitter gourd or Karela.

    I’ve tried making this sauce. Apparently the 4 lime juice was too much. It made my sauce very sour. Might have been better if it left it out.

    I bought a lot of Trinidad scorpion peppers this year from a local grower. I tried a few and they were HOT. I then froze the rest. I was surprised to find out they were not as hot now since they have been previously frozen.

    I have been making pepper sauce for years. All kinds, from mild to extra hot, from a sauce to chunky. Lately I have been using scotch bonnet of one color only – only red or only yellow. You will be surprised at how each one has a unique taste and flavor.

    I love my pepper sauce and like any good Trini have my own recipe. Similar to yours, but I have never used lime/lemon with the rind still on. Definitely going to try your recipe next time my pepper sauce runs low for that unique touch.

    Hello Chris. I am a lover of any kind of hot sause. I guess I inherated it from my mother. Last season I grew some Habenero peppers for the first time and is amaized with the lovely flavour . It was too late to plant Bonny's last season. I got a great deal of Habbos' and added some similar ingredients and put them in my blender. Have a few bottles in the fridge.     I lived in the Caribbean for two years. The hit sauce was amazing–fiery and full if of flavor. The fiery portion didn’t linger, either. Well, I’ve never been able to find a recipe to recreate those taste combinations–until now!!!! Thanks for the step-by-step guide.

    I can't find where to buy shadow beni leaves. I just used the cilantro and blended as instructed. I tasted it but I found something's missing on the taste. I added 4 tablespoons mustard, 2 tablespoons garlic powder, and 3 tablespoons sugar. I liked it a little bit sweet and the result was just perfect to me. I hope I remember these blend next time I make pepper sauce.

    I have made my mom’s pepper sauce recipe and everyone loves it, I tried yours and it is a big hit as well. Everyone is still partial to my mom’s , I think besides the fact that it is good, she died two years ago , so it is more loyalty than anything else. I have also made it with pimiento. I do not get it in CA but my in laws ship it from NY for me and while I disagree with the person who said it is not for the faint of heart ( it is not a hot pepper but full of flavor) IT does make an incredible sauce.     That Hot Sauce really looks fantastic! I am in the process of aquiring the ingredients and will definitely be trying it! I grew up on a Caribbean Island, and hot pepper sauce was a staple in the house and at every meal. Must have the Scotch Bonnet aroma and flavour, not to mention the heat with all meals.

    I have never tried green papaya in my pepper sauces, only fro tenderizing meat & green papaya salads. But as a Jamaican, we love everything with pepper. Right now the Scotchies are not only hot but very flavourful!!

    I tasted a pepper sauce from Belize that was made with carrot and it was good. Also, I go to an african restaurant in Bklyn, NY and their pepper sauce is unique in taste and good. But I will be making yours today.

    Nothing better than homemade peppa sauce. As kids we used to take some from the jar and put it at the side of our plates to be like the adults. By the end of dinner, sometimes our eyes would be red, our noses watering, and our tongues burning!

    I love this recipe. I got some pepper sauce from panama that was also flavored with fruits loke papaya and mango. Think I'll throw some in this recipe to give a few batches a different spin.     morning chris, i have started a business of bottling pepper sauce and it's going quite well. it hasnt reached groceries or supermarkets but it leave trinidad quite regularly. I have bottled it with the label *saucy ruth* and my customers love it….. however the prices of peppers r ridiculous right now due to the weather here in trini. I paid $600.00 for a half crocus bag , a little over seven hundred peppers. my recipe is similar to urs with a few differences ha ha.

    It's true that putting pepper sauce in the fridge looses some of its heat. My father in Trinidad keeps them in glass bottles out of the kitchen on a counter. But for some reason here in Canada putting them in the cupboard for a while, I noticed it starting to spoil. Anyone know why???

    Chris, great recipe. As an alternative, you can place the blended ingredients in a pot and bring it to a boil, then bottle them when partially cool. In that way immediately after bottling you place a cap on the bottles.The remainig heat of the product would then create a vaccum in the bottle which would prolong the shelf life and you would not need to store them in the refridgerator until after it is opened. One note is that you should sterilize the bottles by washing them in hot water and allowing them to properly dry before you fill them.

    Chris…. 1 TBS Trinidad curry powder, 1TBS cumin, 1/4 C. mustard oil and 1/4 C.brown sugar would be a good thing that can be added. And , instead, of limes—1/4 white wine vinegar.

    Hi Chris, I prefer to make my pepper sauce in the food processor ( I usually call it ground pepper because it is very thick as I add no liquid – unlike the blender where you must add liquid) especially if I am sending it abroad to North America. Even if its a local destination (Trinidad and Tobago) I do the same. The reason being when it is received it goes such a longer way when diluted. e.g. I send off one bottle and its so thick and concentrated that that person may sometimes get two or three bottles from that single one. That way its more beneficial to them and less bottles to travel with!!!!!

    Hi Chris, I was just thinking of you this morning…will likely pick my first batch of Guava tomorrow a.m. (You had forwarded me your Mom's recipe for Guava Cheese last year). I would love to add the Hot & Spicy Kitchen Handbook to my growing collection of reference materials for my adventures in Caribbean cooking! I'm currently experimenting with Mango Hot Pepper jelly and will forward my results to you at a later date…a recent "adventure" to share with your readers using "fresh" Scotch Bonnet" peppers: Feeling pretty cocky, I slipped on my latex "pepper" gloves and proceeded to chop with confidence; finishing, I washed my hands with soap and proceeded to prepare my batch of Mango Hot Pepper Jelly; I noticed a slight tingling under my finger nail but thought nothing of it. A few hours later the tingling progressed to pain I would assume could compete with Chinese Bamboo Torture – I tried cleaning with a finger nail brush, the point of a nail file, etc., anything to dig out the pain! The pain lasted nearly a week – next time I will use Rubber Gloves!
