The Ultimate Grilled Salmon Recipe.

As we wrap up the annual July Month of Grilling for 2017, I thought I'd share one of my favorite salmon recipes with you. While we had a lot of fresh-from-the-ocean fish and seafood on the islands when I was growing up, for some reason our salmon always came from a can (say 'tin') for some reason. Especially around Easter-time when mom would prepare a host of ground provisions, topped with stewed canned salmon. While I still use the canned stuff, I do enjoy the fresh (as can be expected since I don't live near the ocean) salmon we get here Ontario.. when I can afford such!

Caribbean Herb Grilled Fish

I may have mentioned this in the past, but growing up on the islands I never liked fish and I think the same can be said about my brother and sisters (mom had a tough time with us). While I outgrew this, I still think my sisters are not fans of fish to this day. My brother on the other hand, elevated his taste buds.. so it's not strange to see him at seafood restaurants in New York sitting behind a massive lobster feasting away. While my fav fish dish is my mom's curry Kingfish, during the summer months this grilled fish is something I do quite often.

Sofrito Pan Roasted Chicken Recipe.

It's only natural that after posting the Sofrito recipe a while back, I'd have a way for you to put such a classic ingredient to use. Sofrito is basically a seasoning base made in the Spanish speaking Caribbean which is added to enhance the overall flavor of meats, stews, soups and other dishes. In this recipe I'll show you how simple it is to take something as boring as chicken breast and pan roast them on your stove-top for what I believe is the most juicy (and delicious) way to enjoy a part of the chicken notorious for being overly dry and bland.
