Stewed Turkey Wings Recipe.

I'm not a huge fan of turkey, especially when it's done the traditional North American way - roasted in the oven. I much prefer getting the cheaper cuts like the necks (Curry Turkey Necks) and in this case, wings. Though a bit tougher than chicken wings, I find that they hold up well to the Caribbean way of stewing and the outcome is quite delightful. Tender pieces of meat, with a wonderful gravy which is excellent on rice, potato, dumplings, roti or ground provisions. The key is in the way we'll season, marinate and finally braise these turkey wings in a process which is most traditional to the Southern Caribbean.

Over the years I've shared countless recipes for making jerk marinades, sauces, how to make finger-licking Jamaican jerk in the oven and classic jerk on your grill and bbq. As we continue our annual July Month Of Grilling I thought I'd shift focus and share a gluten friendly version of this classic Jamaican jerk marinade for our friends who deal with gluten intolerance. A jerk marinade which goes well with fish, shrimp, pork and in this case, some chicken legs which we'll marinate before slowly cooking them over a moderate coals-fire in the back yard.

Rundown is yet another stew type dish where there are several variations as you make your way across the Caribbean. From the ingredients used to the technique, you'll find that as you go from island to island, you'll encounter subtle (delicious) differences. This recipe was shared with me many moons ago when I first came to Canada and I became friends with the only other Caribbean family who lived the the same apartment building we called home the early years in Hamilton. My friend's Jamaican grandmother was a general in the kitchen and from time to time she would share some of her secrets with me... she saw the curiosity in my eyes!

It's only natural that after posting the Sofrito recipe a while back, I'd have a way for you to put such a classic ingredient to use. Sofrito is basically a seasoning base made in the Spanish speaking Caribbean which is added to enhance the overall flavor of meats, stews, soups and other dishes. In this recipe I'll show you how simple it is to take something as boring as chicken breast and pan roast them on your stove-top for what I believe is the most juicy (and delicious) way to enjoy a part of the chicken notorious for being overly dry and bland.

Our mom is an expert at making Caribbean style stewed red beans and I'm still to find someone who can match the way she balances flavor, tenderness and the perfect consistency to the gravy. A recipe which calls for soaking dried beans and slowly cooking then for a relatively long time. Time is something we never seem to have much of lately, so I've come up with a recipe which will cut the cooking time tremendously and give you the same sort of feel-good vibe as if you were eating traditional Caribbean stewed beans - stuff your mom or grandma would make for you.

Simple, Quick and Tasty! Three words which embodies this chicken recipe. I had a request on Twitter a while back asking for a simple but tasty way to do chicken in the oven, on those weeknights when you want to eat well but not spend all night in the kitchen. Though I've shared several oven roasted chicken recipes in the past, I went into my personal repertoire, for one I do on the regular for my family. The flavor you get from that hint of ginger, allspice and the sweetness of the roasted peppers, will definitely have your family asking for seconds.

When you grow up in the 'country' areas on the islands, you're sure to have a kitchen garden where most of the vegetables, herbs and peppers you use in in the kitchen, comes directly from. My brother and I were gardeners from a very young age (not by choice.. especially when we wanted to run football and not tend to plants). Looking back, it seems we always had some sort of beans planted in that small plot of land at the back of our home. Maybe this is where my love for beans of all types originated? In this recipe we'll use two of my favorite ingredients, string beans and shrimp along with that lovely curry base, this will definitely be delightful.

Island life is closely connected to the ocean as well as the land on so many levels. Like the fresh herbs,vegetables and fruits we're blessed with, the Caribbean Sea is packed with some the most delicious fish and seafood known to man. However when it comes to Salmon, it was more of a Good Friday dish and usually the salmon came in the form of a can (or "tin salmon" as it's known). But if you've ever had stewed or curry salmon (yes the same stuff from the can) done the Caribbean way.. lets just say you'll be amazed! Living in North America means fresh salmon is readily available in most supermarkets, so this is one of my go-to recipes when Tehya (shes the only one who really deals with the fish and seafood) and I get a hankering for baked salmon.

This being the holiday season I thought I'd take a classic recipe for making saltfish buljol and put a little festive spin on it, to serve at your holiday party or to take with you as you visit family this holiday season. We'll follow the same basic rules of making traditional saltfish buljol (basically a fish salad) and add a few other ingredients to help balance and brighten up the overall flavors of this classic dish. You'll notice that I did post this under the gluten free recipe section, but do keep in mind hat you'll need a gluten free bread or cracker to serve these on, to meet with your complete gluten free dietary needs.

The Ultimate Coconut Rice Recipe (gluten free and vegetarian).

I was recently challenged to put together a coconut rice recipe, however the recipe must be foolproof. According to the person who emailed me, they have a difficult time cooking rice as it usually ends up a messy mush in the pot or under-cooked. They were looking for perfectly cooked coconut rice, grainy in texture and rich in Caribbean coconut flavors. Being a rice dish I thought it would be a good time to also have it appeal to vegetarians and friends on a gluten free diet at the same time.
