Hello Chris, I have enjoyed your recipes brings back a lot of childhood memories growing up in Antigua. I am now in UK and over here we tend to stuff the neck cavity of the turkey and not the belly. You can always put halved lemons or onions there.

I have cooked hundreds of large turkeys, I newer use foil, try and think what we used before foil was invented! Muslin! So I use what I call in England is a BLUE J Cloth it is like muslin with breathing holes which allows the bird to breathe. Leave the J cloth all the time and the skin of the bird will still be crispy. Butter the cloth before you put it on the bird. It works!

Hey Chris,
Great looking Turkey. Have you ever tried Brining your turkey? My Parents are from the US(South Carolina) and they make a mean stuffing with sausage and unsweetened cornbread (although, I like to ad just a touch of sugar for balance).
This year were going to fry a couple of turkey's.

Yum! Delicious. Taste good. I have turkeys in my farm and we usually cook roasted turkey during thanksgiving days. But I have to say you have much better recipe than mine. I will bookmark it and make sure to follow the recipes in the next thanksgiving day. Thanks for the great tips.
